  • Beer Can Chicken | Smoked Beer Can Chicken Recipe

    Here’s what you’ll need for this Beer Can Chicken recipe:
    - 1 Whole Chicken (raw of course)
    - 1 can of Beer (cheaper the better)
    - All Purpose Seasoning *recipe to follow
    - The BBQ Rub (howtobbqright.c...) or your favorite bbq seasoning
    First you’ll need to remove the chicken from the packaging. Most chickens are packed with giblets so remove these from the cavity. Rinse the bird under cool water and pat dry.
    Spray the outside of the skin with a light coating of Vegetable cooking spray and sprinkle All Purpose rub on the outside.
    All Purpose Beer Can Chicken Rub
    - 1 cup Salt
    - ½ cup Granulated Garlic
    - ¼ cup Black Pepper
    - 1 tsp Parsley (dried)
    - 1 tsp Oregano (dried)
    Mix the ingredients in a bowl and store in an airtight container. This recipe makes enough for several Beer Can Chickens.
    Add a layer of The BBQ Rub (howtobbqright.c...) to the outside of the Beer Can Chicken. Be sure to sprinkle both AP and BBQ Rub inside of the cavity as well.
    I also use an injection to add extra moisture and flavor to the Beer Can Chicken. This week I’m using Butcher BBQ’s Bird Booster Rotisserie (howtobbqright.c...) , but you can use just about anything. The ratio for the bird booster is 2 cups of liquid (directions call for water but I substituted chicken broth) to ¼ cup of bird booster powder. Whisk these ingredients in a bowl and it’s ready to use.
    To inject the Beer Can Chicken hit each breast 3 or 4 times just off the breast bone. Move the needle to the lower side of the Beer Can Chicken breast and pump injection down the bottom side. Move down to the Beer Can Chicken legs and stick it a couple times and then go in through each thigh.
    You’ll need a 12oz can of beer to hold the Beer Can Chicken. Pour out (or drink) about ¼ of the beer and open up the top a little so steam can escape.
    I found a vertical chicken rack that holds a 12oz can perfectly and it gives the Beer Can Chicken a little more support which keeps it from tipping over. It can be a little challenging to balance the chicken on just the can, so you may want to invest in rack.
    Once the Beer Can Chicken is sitting on the can, it’s ready to go on the smoker. The cooking temperature I use for smoked chicken is 300 degrees. Set your smoker or grill up for indirect cooking and add a couple chunks of fruit wood for flavor.
    Once the smoker is running at 300 degrees, place the beer can chicken on the pit and close the lid. It will take about 2 hours depending on the size of the chicken.
    Beer Can Chicken is done when it hits 175 in the thigh and 165 in the breast. You’ll want to be sure to check both areas before removing it from the smoker.
    This Beer Can Chicken took 2 hours to reach final temperature and when the thighs were close I moved the probe to the breast just to confirm that it was ready.
    Carefully remove the Beer Can Chicken from the smoker and let it rest for at least 10 minutes before cutting into it.

    Thanks for the great videos. Sorry people have to be such tools and bash and make stupid comments about painted beer cans. I'm embarrassed for them. Some of us played in the dirt, and drank out of the hose, hell we even survived driving in the back of a pick up trucks. Keep up the great work.... Big fan here

      i got some of that thar yuppie micro brew beer in cans & the plastic labels just peel off cans......my self ,i was more concerned about plastic lining on inside of beer can melting....it's good though, kinda like moose turd pie....my friend who passed away recently, always called it" beer can up the ass chicken".

    Looks fantastic, I love the crispy skin! I usually spray my beer can with cooking oil to avoid the chicken getting stuck in the end. Try this next time and I'm sure you will be happy with then result.

    great recipe.. did it with "bone suckin sauce" for the seasoning and it came out great.. did another one with "slap ya mama" cajun seasoning and it came out amazing too.. did them in a vertical smoker with a pan of beer and crab boil right over the coals and under the chicken... Amazing!!

    Hey Malcom, just about a few weeks ago I tried a chicken like this and the next day just to compare, I did one with lemon pepper seasoning and some lemon zest and in place of the beer, a can of lemonade. It was surprisingly good, if you haven't done that before I would really recommend it.

    Hello Malcomb; I do my BBC just as you do. I also add onions and garlic to the beer can liquid, I also close up the top at the neck with tooth picks to hold all the heat and the steam from the BB can. Instead of beer , I like to use apple juice. What ever you use for a liquid, this is a great way to cook chicken. Instead of turkey for thanksgiving, we are cooking 2 real nice size hens instead of a turkey. Happy Holidays Malcomb

    Fantastic video. I tried this and it worked great. Use a tall boy, drink half and then fill the other half with BBQ sauce. Use it a as a dipping sauce. Better than good.

    I use a can opener and open the whole can of beer then i use a potato to plug the neck of the chicken & it makes the chicken stay moist.

      Plug the neck hole with a quarter potato or quarter onion, keeps the steam in, cooks more even, and doesn't evaporate away.

    Love your recipes, thank you for sharing! I use them all the time. What is great is beer can turkey as well.
    Find small bird, follow your exact same recipe, except substitute the chicken broth injection with turkey broth. It's fantastic too!

    Malcom, great post. You can't match the beer can method for smoking whole chickens, however, I soon realized that the beer, really doesn't add anything to the chicken. I use a vertical roaster on top of a tin pie plate. Works great. I'd like to see a beer can turkey next!

    Use a pie tin under your rack with injections juice and onion, it will help self baste, and ALWAYS put a quarter cut onion in the neck to keep steam from evaporating, BUT MOST OF ALL pre heat the rack with the beer, by the time the beer gets to steam level your bird is half way or more done, by the way your quarter looked undercooked

    I prefer using the Sittin' Chicken ceramic chicken steamer instead of an actual can. Also, I use olive oil as that gives a better taste to the skin, in my opinion. Going to taste good either way!

    My mom bought me a beer to make this for her. She is pretty strict on drinking. We had some beercan chicken that night.

    "I happened to have one of these in the fridge." 🤣 You don't have to explain man. I bet your fridge drawers are filled to the brim with those baby's. Especially in football and Nascar season. You strike me as a Copenhagen man, as well. You probably have a dip every two beers and spit in the empty cans. Keep on keeping on and don't ever change. 👍

    Never thought to inject chicken, but makes sense. Does the injection make a noticeable difference if already using the can?

    I add rosemary thyme garlic star anise pepper lemon wedge in beer.
