My pumpkin pie 2 C. pumpkin puree 1 tsp ground nutmeg 1 tsp cinnamon 1/2 tsp ground ginger 1/4 cloves 1/2 tsp ground allspice 1/4 C. sugar 1/2 tsp salt 2 large eggs 1 can evaporated milk 1 unbaked pie shell whipping cream for topping Bake one butternut squash (or equivalent) until soft and run it through a potato ricer. Preheat oven to 425°F. Mix sugar, salt, and spices thoroughly in a small bowl. Beat eggs in a large bowl. Stir in 2 cups pumpkin (or squash) and sugar/spice mix. Slowly stir in evaporated milk. Pour into pie shell, and bake for 15 minutes. Turn down oven to 350°F, and cook for 40 to 50 minutes until a butterknife comes out clean. One butternut squash should yield enough for two pies.
