If you don’t have a hot plate, you can use a non-stick saucepan. Otherwise you can also serve on a regular plate, just make sure the gravy is piping hot and serve immediately. 😄
If using a non stick pan, just warm up the pan and pour the egg mixture on it till half done, just like how you would on the hot plate. You can serve the dish on the pan itself.

No, one is light soy sauce for flavour and dark soy sauce for colour. They are not sweet soy sauce.

Cooking wine is used to remove fishy flavor of the food. Not using it is also OK.
