    What a great tutorial! I love kumquats and just received a large bag from my neighbor. I'll definitely be making this. Thank you for sharing your recipe and technique.

    I usually make kumquat jam every year. I tried out this version and I liked it quite a lot. the only thing is that the pieces of kumquat rind a quite big and a bit hard. In my recipe, I keep the kumquats in water for at least 12 h (the kumquats are sliced thinly), then I cook them for 30 minutes and only after I add the sugar and cook further the kumquats until the jam is ready. Anyway, I would like to thank you for the recipe, It is very nice, the consistency of the jam turned out perfect and it is very tasty.

    It looks delicious. I was simply looking for a kumquat jam recipe when I came across yours. I think I am going to try it. One of my neighbours has a glorious kumquat tree filled with fruit and he has been generous enough to give me a kilo of them.

    look very nice is there any way to make with out sugar ? or its possible to use grape molasses { thick syrup made } i have in my garden Kumquat will pick now trying make without sugar so my kids can eat healty :)

    This is a great recipe! Thanks Alia! I've made something similar to this, but using chamomile instead of star anise. It was delicious on toast a biscuit and goes really well with nutella too.

    Do I need to add Orange blossme water can I substitute it with something else or just omite it from the recipe?

      not really - every fruit has a way of making it into jam. if you are looking for date jam you can search youtube for "cookingwithalia tostadas" in there my friend (guest of the show) shows how to make date jam

    @skyler807 my jar was good quality and had a pretty thick rubber - it survived (although I was worried about it too)! you can reduce the oven to 300 if you want, or just use an old jam jar that you have (after finishing the store bought jam - like Bonne Maman).

    @TheLolla85 les oranges c'est un peu different. premierement tu ne peux pas utiliser toute la peau (la peau du kumquat est tendre et sucree), deuxiement tu auras besoin d'un 'gel' pour les marmelades. Tu peux trouver des recettes pour comment faire de la marmelade aux oranges dans d'autres site web - elles sont sympas!

    there is a link to the written recipe in the "About" section underneath the video: 271 grams of kumquats (weighed after being cleaned and sliced thinly)
    271 grams of white sugar (same weight as cleaned kumquats)
    1/2 cup of freshly squeezed orange juice
    2 star anise (or cinnamon sticks, cardamon seeds, or cloves)
    1 tablespoon orange blossom water

    you can use any type of jars you just have to sanitize them. search for "cookingwithalia preserved lemons" and see how I did that.

    That just looks so amazingly pretty. A lovely present to give. However I remember once Kumquat used to be quite available here but it's been years since I've seen then for sale. But I'm definately going to try to find some.

    Kumkuats should be boiled 3 times before putting them in syrup. This way bitterness will go.

    surely the weight of the fruit was 271 grams, not ounces! That would be almost 17 pounds of fruit!

    Are you sure that's 271 ounces that equals 16 pounds.
    We use grams and that equals 7683 grams or
    7.683 kg. What you have there doesn't look like 7 kg.! 🤔
