The crafter being a microwave in the Adventure Time texture pack is probably a reference to NEPTER, a robot character made early in the series to be a “never-ending pie-throwing robot” so the idea was pies would spontaneously be made inside the microwave and then be ejected out one after the other. Like a crafter. Pretty clever if that was the idea.
I’m really nostalgic of the Mario mash up pack (it’s what inspired me to make a Zelda one, check out my yt) and it makes me really sad to see that they’re no longer updating it. It was always so much fun to see the mash-up pack each update.

Norse Mythology isn't abandoned it just takes a bit longer due to the art style of that pack specifically and some of the quirks of Mojang's BTS updates.
I'd say the most likely reason for updating these is that they're still packs you can get. Especially with the Mario pack, which comes free with Bedrock edition on switch (Since it's an exclusive pack)

A lot of people have certain packs like Plastic and Natural because at one point they were included with physical releases of the game, so it would make sense to continue making those ones.
i used to strictly play with natural texture pack because for console texturepacks where the best we had as most know addons("mods") only just got added recently. but now i play with custom vanilla tweaks pack for the authentic mc look with minor improvements

i think another reason why the skyrim texture pack is no longer being updated is because its hard to use in regular survival due to half the textures not looking like they should, like half the wool looking like stone bricks
