My wife absolutely loves shrimp. Years ago we had some in south Florida and ever since then she has used it as a benchmark. Nothing comes close. I am going to buy shrimp tomorrow and make this for her. All the other ingredients I grow myself except the salt.

I also remove the head, devein and leave the shells of the shrimp but I sauté and smoosh the head first since it has sooooo much flavor.

Even for shrimp "scampi" I always buy shrimps with the shell on and make a shrimp "stock" by sauteeing the shells,in some water, to which I've added carrot, celery onion, garlic, salt, pepper and parsley. I strain the stock through a sieve smashing the shells against the sieve to make sure all the goodness comes out.
