I'm so glad you used Pineau des Charentes for this cocktail, I used to work in a Cognac/Pineau store in that region and seeing this spirit getting some love is really great. Just a note though, Pineau isn't really considered fancy, mainly due to the hazardous aging process. Loved the vid and cocktail !
I just learned of Pineau de Charentes a few months ago. I really enjoy it as a fortified wine on its own, but I hadn't thought about using it in a cocktail before.
When I'm doing an orange oleo I use the peeled oranges to make a shrub. The I'm cooking a syrup with the sugar with the peels left inside. Afterwards I remove the peels, dry them and crush the in a mortar so they are like dust for cocktail decoration or turn it into cotton candy.
