    AERATED WHITE CHOCOLATE aka WHITE CHOCOLATE AERO
    200 white chocolate
    30g vegetable oil
    COOKIE BASE
    Butter cookies, crumbled
    Unsalted butter, melted
    YOGURT MOUSSE
    200g yogurt
    30g sugar
    1 teaspoon gelatine powder, hydrated
    100g heavy whipping cream
    10g lemon juice
    1/2 teaspoon vanilla extract
    STRAWBERRY & HIBISCUS TEA
    300ml water
    10g dried hibiscus
    50g frozen strawberries
    10g basil leaves
    1/2 cinnamon stick
    Sugar and lemon juice to taste
    STRAWBERRY & HIBISCUS JELLY & FLUID GEL MIXTURE
    Strawberry and Hibiscus Tea
    1 teaspoon agar agar
    STRAWBERRY SORBET
    300g frozen strawberries
    1.5g xanthan gum
    Corn syrup to taste
    MACERATED STRAWBERRIES
    Fresh strawberries, halved and/or quartered
    1/4 teaspoon elderflower syrup
    Sugar to taste
    MICRO BASIL LEAVES

    10g atiso đỏ khô
    50g dâu đông lạnh
    10g lá quế tây
    1/2 cây quế
    Đường và nước cốt chanh theo khẩu vị
    HỖN HỢP THẠCH VÀ GEL
    Trà dâu và atiso đỏ
    1 muỗng tea bột agar
    KEM SORBET DÂU
    300g bột xanthan
    Siro bắp theo khẩu vị
    DÂU ƯỚP
    Dâu tươi, cắt đôi hoặc làm tư
    1/4 muỗng tea siro hoa cơm cháy
    Đường theo khẩu vị

      A chỉ dùng xanthan chứ chưa thử chất khác nên không rõ lắm e

    can you use a vac pac bag instead of a vac container?

      Unfortunately not because there won't be enough space in the bag for the chocolate to expand properly

    Is it posibble to do aerated chocolate without vacum sealing container?

      Unfortunately not 🙁, you need a whipping siphon to add bubbles to the chocolate and a vacuum container to help expand them

      @@HaiCooking oh ok , cause i have whipping siphon and used it many times but never like this. So probably should get vacum container 🤷‍♂️
