There is a very old story for calling Assamese people as 'khar khuwa axomiya' (খাৰ খোৱা অসমীয়া). .....📌 when there was a war going on between the Mughal and Ahom empires, then the mishmi people had entered this place of Assam called 'Mohong' and they captured that place...from that place Assam used to get 90% of the salt...or even the Ahom kingdom could not pay much attention to Mohong because of the war......Moguls started selling salt in Assam at double the price to extract some profit, from that they start using the same money in the war to defeat the ahom…when Ahom Senapati Lachit Borpukhan found out that they blocked all the ways to import salt from the Moguls…the Moguls secretly sold salt in Assam through illegally through the jungle path......these are buying by the rich people of Assam . ...after a few weeks or months the poor or middle class people of Assam made a product called as 'KHAR' ...instead of salt they started using or eating khar...... All the people of the rest of Assam started using it…..in such a way that the Mughals could not sell salt in Assam…or in insult they started calling the people of Assam ‘Khar khuwa Axomiya’….but we assamese people proud to be 'Khar khuwa axomiya'❤....that we didnot come under the control of mugals... And in this way, the people of Assam took a small step and saved Assam from coming under the control of Mughals....... #Love from ASSAM❤.....
As an Assamese, I feel our dishes are meant to be eaten together with rice, mostly. Like you won't like aloo pitika alone, or dry fish chutney alone. We have to have these with the combination of daal bhaat etc. That's what's the authentic way to enjoy Assamese cuisine. Atleast for me.

No one outside of Assam knows the fact that Digboi in Assam is the first oil field in Asia and second in the world. Oil from Assam is now marketed by Indian Oil Corporation.

I really love the fact that, as an Assamese guy whenever we see a video related to assam we get united and become so proud to represent our state and we always try to support our culture by supporting any video related to our motherland. Fun fact : We Assamese do not add much machala(s) into our foods. Khar, which is very helful to our digestive system is being eaten like this since the very beginning. The taste is blend, but the health benefit you get is immense. We eat khar by mixing it with banana stem, Papaya, Bottle gourd etc etc. For the aloo pitika part, we like to have it with gorom bhaat, boil egg, some daal (optional), the aloo pitika, little bhoot jolokiya pickle and boom you just had the best comfort food of the Assamese people. Also i would recommend Duck/Chicken/Pork with sesame seeds curry to anyone from outside Assam. It tastes heavenly. You can also try the pigeon curry. Plus Duck with white gourd is one of the popular dishes from Assam. Be it Bihu or any other family function a duck curry is must in the menu. Happy eating. :)
One thing i would like to confirm..not every Assamese people eat/drink the same food..it differs from region to region..Like for example -dry fish is not eaten by each and every Assamese Rice beer is also not consumed by everyone..Assam has so many communities,tribes so food habits differ.
Actually the term ASSAMESE is used as a common term in heterogeneous way which includes all communities Assamese plus tribal communities.. that's why they hv included Haaj too but actually it's a common beverage only of tribal communities like Ahom
In Jatinga it is said that the birds suiside, but it is actually not. During the winter period i.e., as you said nov-dec ... So called migratory birds Amur falcon flew over Assam from Syberia as the weather is not suitable for them in Syberia.. And those birds rest at Jatinga. As it is winter, their is much fog and moist in surrounding , due to which their wings becomes heavy and unable to fly... Ultimately it leads to dead of those birds.That's why it is called as Suicide place of Amur Falcons..

An Assamese here, and seeing you guys taste cuisines from my state, just makes my heart so happy! Very correct Satyam. Berma (which you called shidol as it is only called by bengalis) is the authentic name for the fermented fish(is lil soft wrt dry fish) used for almost every tiprasa dish (except nonveg) in Tripura by it's indigenous people called Tipra. LOVE from Tripura for the tiny trivia you gave. Thanks ❤ Similarly we Tipras also make aloo pitika but with berma in it and no mustard oil called locally as ALOO MOSDENG.
mosodeng literally means mashed isn't it ? pitika means the same.. well, i was curious if shidol can be any fish or is it precisely the shital fish (scientific name: Notopterus chitala) ? it's found in the Ganga basin and the Brahmaputra basin and names are similar in west bengal and assam
Aloo pitika is basically a side dish. The most simple way of having it is Aloo pitika, daal with rice and kaji nemu (lemon which is endemic to Assam and also has GI tag)! Heaven ❤
Aloo pitika is the most favourite, tempting and satisfying dish for almost all Assamese people. It's taken simply with daal which call as daail or dali in here and rice. Lai haak is not mastard leaf, it is similar category of leafy vegetable, but much bigger in size and having its own unique attractive smell, in winter it's just amazing. If you have heard about Chinese cabage it's a similar thing,but still there is difference between our local and that Chinese one. Hidol dry fish chutney though is popular now a day but itsnot an original assamese dish, this basically belong to Bengali culture.
Should have tried Assamese snackes (like coconut cake, coconut & til laddu, doi chira, xandah etc) too. It's amazingly tasty & healthy of course.. Make another video on these amazing foods..
Aloo pitika is always consumed with steam rice and dal with kaji nemu and a chilly 😊thts how you emjoy a hearty meal. And rice beer is not at all consumed by all communities. Also there are so many tribal communities in assam so all the cuisines you tried today actually might not be a perfect assamese meal for sure . Also you guys should have tried Joha rice /black rice payokh (kheer)which cant be missed 😊😊 always a next time 😊
Assamese cuisine is very subtle you wont find much spices used in their food . They try to keep it simple and let the ingredients come through rather than spices

Aaloo Pitika goes with Rice.. Rice,Aalo Pitika and ghee is basically soul foood! Pork with Laai Haak (not Laizaak) this is emotion.. Haahor mangkho (Duck) uffff I feel hungry now! & since it was Assamese cuisine there should have been Jolpaan ( that is our go-to breakfast)

Dry fish doesn't mean sedol fish for Assamese people. We prepare 'Hukoti' from locally available fish in the pools,rivers of Assam. If you want to have the real taste Assamese Rice beer then you have to visit Assam.... Love from Assam❤
Hukoti is fermented fish paste we call it chucha in deori and namsing in mising and nafam in bodo ig. It's always taste so delicious with bhoot jolokia🤤.

Khaar, Bhoot jolokiya,duck curry all is an emotion of Assamese people being an Assamese I must say our cuisine is underrated bt yet delicious koi compare nhi hai bhai. Most healthy way of cooking isiliye hame koi bimari nhi hai we add more veggies in less oil or masala ..datz y our Assamese cuisine is best among all of Indian cuisine...
All these dishes complement with rice. You won't get the real taste of Aloo pitika and shidol chutney without rice... 1 spoon shidol chutney with a plate of rice is ❤

You guys did amazingly with our cuisine! Bas next time, get the folks to serve you everything together like a huge thali, with bhaat, dail, Khar, meat curries, rice wine etc, everything goes really well together as a whole meal. One thing you missed was dhekia xaak, Northern pahadi log lingda bolte hain, it grows wild in the Northern mountains. Had the privilege of living in Rishikesh for 3 yrs, I was the only weird person stopping on the side of the road randomly and picking dhekia xaak haha! Also masor tenga and puthi masor bhaja. Do go to the North East if you can, not just Assam but all the 7 sister states, amazing people, food and culture, amazing hospitality and stunning landscapes! Sending much regards :-)

Even as an Assamese, a lot of the flavours are acquired tastes. In fact 5 year old me hated everything on the list haha! Definitely khaar was forced down my throat, and even the famous lai xaak pork was an acquired taste for me (it was finally lai xaak pork *dry fry* that got me ;) )
Bellowww.... Khar Khuwa Axomia here😊 Khar sirf kele k chilke se hi nahi banta balki pura kele ka ped use hota hai. Kele k ped ko kat ke sukhate hai dhoop mai, fir usko jalatey hai aur Jo rakh banti hai usse wo hum use kartey hai Khar ki dish banane Mai. Infact, abhi toh garmi ka season hai toh Mai jis area se belong karti hoon waha kaccha aam k barik kaat ke bhoot jolokia namak aur Khar dal k bhi khate hai.

Actually the term ASSAMESE is used as a common term in heterogeneous way which includes all communities Assamese plus tribal communities.. that's why they hv included Haaj too but actually it's a common beverage only of tribal communities like Ahom

In Jatinga it is said that the birds suiside, but it is actually not.
During the winter period i.e., as you said nov-dec ... So called migratory birds Amur falcon flew over Assam from Syberia as the weather is not suitable for them in Syberia..
And those birds rest at Jatinga. As it is winter, their is much fog and moist in surrounding , due to which their wings becomes heavy and unable to fly... Ultimately it leads to dead of those birds.That's why it is called as Suicide place of Amur Falcons..

An Assamese here, and seeing you guys taste cuisines from my state, just makes my heart so happy! Khar is basically alkaline/bicarbonate, and it's used to soften down vegetables...and is a very great digestive! Also, it's laai haal/saag,i.e., mustard greens. Would've loved you guys to try maas pura,maas pitika, maas bilaahi, gahori pura etc...but for the next time! And Satyam and Vivek, can definitely see the glow in you post the food coma! Khaar isn’t supposed to taste like just salt 😂😂😂 and we usually eat omita r khaar , made from papaya; and we don’t eat dry fish chutney straight out of a bowl 😂 but it was nice to see Assamese cuisine being represented- also you should try kumura duck (duck with gourd) Assamese cuisine is just so diverse you HAVE to come here to try it ❤

Very correct Satyam. Berma (which you called shidol as it is only called by bengalis) is the authentic name for the fermented fish(is lil soft wrt dry fish) used for almost every tiprasa dish (except nonveg) in Tripura by it's indigenous people called Tipra. LOVE from Tripura for the tiny trivia you gave. Thanks ❤ Similarly we Tipras also make aloo pitika but with berma in it and no mustard oil called locally as ALOO MOSDENG.
mosodeng literally means mashed isn't it ? pitika means the same.. well, i was curious if shidol can be any fish or is it precisely the shital fish (scientific name: Notopterus chitala) ? it's found in the Ganga basin and the Brahmaputra basin and names are similar in west bengal and assam

Aloo pitika is basically a side dish. The most simple way of having it is Aloo pitika, daal with rice and kaji nemu (lemon which is endemic to Assam and also has GI tag)! Heaven ❤

Aloo pitika is the most favourite, tempting and satisfying dish for almost all Assamese people. It's taken simply with daal which call as daail or dali in here and rice.
Lai haak is not mastard leaf, it is similar category of leafy vegetable, but much bigger in size and having its own unique attractive smell, in winter it's just amazing. If you have heard about Chinese cabage it's a similar thing,but still there is difference between our local and that Chinese one.
Hidol dry fish chutney though is popular now a day but itsnot an original assamese dish, this basically belong to Bengali culture.

Aloo pitika is always consumed with steam rice and dal with kaji nemu and a chilly 😊thts how you emjoy a hearty meal. And rice beer is not at all consumed by all communities. Also there are so many tribal communities in assam so all the cuisines you tried today actually might not be a perfect assamese meal for sure . Also you guys should have tried Joha rice /black rice payokh (kheer)which cant be missed 😊😊 always a next time 😊
Assamese cuisine is very subtle you wont find much spices used in their food . They try to keep it simple and let the ingredients come through rather than spices

7. Poita bhat ( panta bhat)/ fermented rice with potato teasel gourd chutney, tangy mustard chutney ( pani tenga) or kaji nemu , boiled rattan shoot and bhot jolokia
8. Red ant larva dry curry with onion and chilli and many more to offer

You guys did amazingly with our cuisine! Bas next time, get the folks to serve you everything together like a huge thali, with bhaat, dail, Khar, meat curries, rice wine etc, everything goes really well together as a whole meal. One thing you missed was dhekia xaak, Northern pahadi log lingda bolte hain, it grows wild in the Northern mountains. Had the privilege of living in Rishikesh for 3 yrs, I was the only weird person stopping on the side of the road randomly and picking dhekia xaak haha! Also masor tenga and puthi masor bhaja. Do go to the North East if you can, not just Assam but all the 7 sister states, amazing people, food and culture, amazing hospitality and stunning landscapes! Sending much regards :-)

Even as an Assamese, a lot of the flavours are acquired tastes. In fact 5 year old me hated everything on the list haha! Definitely khaar was forced down my throat, and even the famous lai xaak pork was an acquired taste for me (it was finally lai xaak pork *dry fry* that got me ;) )

Khar sirf kele k chilke se hi nahi banta balki pura kele ka ped use hota hai. Kele k ped ko kat ke sukhate hai dhoop mai, fir usko jalatey hai aur Jo rakh banti hai usse wo hum use kartey hai Khar ki dish banane Mai. Infact, abhi toh garmi ka season hai toh Mai jis area se belong karti hoon waha kaccha aam k barik kaat ke bhoot jolokia namak aur Khar dal k bhi khate hai.

You have to eat it without having any pre conceived notion of standardized taste. Plus non veg part is damn good since you have got too many tribes and each tribe got its own distinctive zaikaa❤❤ assimilation of all these tribal food makes a big fat Assamese thali.❤
