Over the course of this video he establishes 3 or 4 key things to making a sandwich: 0:12 - He establishes the style and colour of the bread he will use. 0:31 - With regard to the spread it's very important that we have a single break just as the spread hits the bread, OK. 0:46 - The ham shoulder should have a quarter of an inch only, and should sit in the correct place - any more than that then the sandwich starts to collapse when eating. 1:33 - He uses three fingers to depict the right placement for the tomatoes. 2:03 - Sometimes the lettuce length challenges this whole fitting. Half an inch excess in the front allows one to see the curvature of the sandwich and the silhouette. If the bread was pulling across the center it would be an indication of the bread being too small. The bread should lie nice and flat - if it were bowing it would be an indication that it isn't accommodating the ingredients properly, OK. 2:48 - He ensures the sandwich height is correct and amends the length of each side, he feels absolutely comfortable and remains square standing. With regards to the sandwich cut, its very important that we have a single break just as the knife hits the top of the bread, OK. Nah, I think he just doesn't mind which one. I think he just likes all types of butter and doesn't have a clear favorite.
They put butter on their sandwiches mainly (if they use it) to keep mustard or mayonnaise from being absorbed into the bread. Just a thin layer.
