Ingredients for about 20 madeleines:
115 g butter
30 g dark brown sugar
30 g honey
120 g all-purpose flour
70 g granulated sugar
1 pinch of salt
5 g baking powder
3 large eggs
For the chocolate shell: 150 to 200 g milk chocolate
I made these yesterday and added 60 gr chocolate chips as well and they turned amazing! my mum from Bretagne and my dad really loved these! Merci! :)
I made this but only refrigerated for 1 hour and a half. If you’re short on time, try it! it worked very well and there’s a dome too!

Hi do we store the madeleine in the fridge after coating with the chocolate immediately ?? Or can we leave them outside in room temperature ?? If can leave out at room temperature, how many days will that be before storing in the fridge ??

What is the best substitute for all purpose flour?
Cake flour (although it has lesser gluten, as suggested to add a heaping tablespoon for every 1/2 Cup)

The chocolate part isn't rlly in depth at all, like you didn't say how we temper or how do we cool it down
Simply because I did not temper, I just melted the chocolate in the microwave and then let everything cool in the fridge for a few minutes!
