Me I even add some msg, turmeric powder or sometimes cheese powder or chili flakes try to experiment . Since you're an Indian you can add some Indian Masala of your choice then add it to your roasted eggplant with beaten eggs then fried it until golden brown. you can dip it you Indian chutneys of your choice.

In Mexico we have a similar dish called Chiles rellenos. The only difference is it is a Chile pepper stuffed with cheese or meat of your choice. I’ve ate them with only cheese. Then the Chile is coated with the egg and it is accompanied with some tomato sauce.
This is simpler but taste so much better. Try making it. It is so easy to make. You will love it. I tried the relleno too, it's good as well, but prefer this better. My favorite food growing up , and still my fave to these days.

Its actually supposed to be Torta Talong (Talong=egg-plant). You cook tomatoes, onions, garlic and ground beef together. Then chopped lil tiny potatoes so it's a bit crisp, then you put them all together and mix raw egg...and then you proceed to fry it with the torta like what she did...i have never seen anyone just dip eggplant in egg and then fry it lol. There's no such thing as a vegetarian filipino/a. 😂

Omg.. I've finally found how this is made. I tried this eggplant during my trip to the Philippines in 2018 and I loved it. It tasted so good, I guess mine also had a melted cheese on top. Actually, all local dishes that I tried were good, and it's so interesting to watch recipes now. I worked with a lot of nurses from the Philippines at Johns Hopkins. Wonderful, hard working, and with a wacky sense of humor. I can't say enough good things about my former co-workers . Their food was a bit too spicy for me, but I was always glad to give it a try. They seem to use rice noodles like we use bread. . .
Banana ketchup on eggplant omelette is just 👌✨ It's sweet which counterbalances the saltiness of the omelette. Tomato ketchup just doesn't work as well.

Not fillipino here but we have a similar dish in indonesia called terong raos. Theyre in smaller pieces and sauced with oil, spices, herbs and soy sauce. My mother does variations with it. She does at times put tuna in it, other times ground pork and even include bacon in it and she make a mayonnaise dip w onion leaves in it.
One of my favorite dish!!! I also add some fresh chopped tomato before throwing it in a pan .Absolutely taste a lot better when grilled than boiling it.

It’s originally should be grilled in coals but it’s too messy a and too much effort and the stove is the easiest one plus if u have the butane portable stove that u used outdoor or for camping it’s also the same function. Not too much hassle compared to actual grilling stuff.

Sorry nothing like chilli relleno , chilli relleno is a pepper usually an Anaheim or Poblano etc. That is stuffed usually with cheese. and egg or egg white and flour batter than fried and served with a chilli sauce on top.
This dish is very similar to a mexican dish called “chile relleno” is almost the same way of cooking, only difference is that we stuff “chiles” with cheese or some other ingredient and then we dip it in that egg mix and fried them as well. I find it very interesting that filipino and mexican cuisine have a lot of similarities.

I'm Indonesian n our local food had something similar. After burn it with fire n peel the skin. Smash that eggplant with chillies sambal. Chillies Sambal compose : Red n green curly chillies Bird eyes chillies Garlic Shallot Onion Tomatoes Candle nut White pepper Chicken stock powder Msg Salt A lit bit sugar . Steam first or fry a lit bit the tomato n the chillies n the garlic onion shallot n the candle nut to makes them softer n easy to smash n blend them to make a paste with salt pepper sugar chicken Stock powder . After done with the sambal paste blend n smash the eggplant before . We called it sambal terong, Wich means eggplant sambal . Other variant of that sambal can be mix with lime leaves chopped (for more aroma) or boiled with coconut milk

Its actually supposed to be Torta Talong (Talong=egg-plant). You cook tomatoes, onions, garlic and ground beef together. Then chopped lil tiny potatoes so it's a bit crisp, then you put them all together and mix raw egg...and then you proceed to fry it with the torta like what she did...i have never seen anyone just dip eggplant in egg and then fry it lol. There's no such thing as a vegetarian filipino/a. 😂

Tortang Talong is my favorite eggplant dish. Very simple yet truly satisfying. One of a kind comfort food.

Omg.. I've finally found how this is made. I tried this eggplant during my trip to the Philippines in 2018 and I loved it. It tasted so good, I guess mine also had a melted cheese on top. I worked with a lot of nurses from the Philippines at Johns Hopkins. Wonderful, hard working, and with a wacky sense of humor. I can't say enough good things about my former co-workers . Their food was a bit too spicy for me, but I was always glad to give it a try. They seem to use rice noodles like we use bread.

Banana ketchup on eggplant omelette is just 👌✨ It's sweet which counterbalances the saltiness of the omelette. Tomato ketchup just doesn't work as well.

Not fillipino here but we have a similar dish in indonesia called terong raos. Theyre in smaller pieces and sauced with oil, spices, herbs and soy sauce. Its nice to see something reminiscent in our sister country🇵🇭🇮🇩

I love how similar are the cultures, in Mexico we have something very similar, instead of eggplant, we used Chile, it may be filled with beef or cheese and it depends where, it may have a tomato sauce.

It’s originally should be grilled in coals but it’s too messy a and too much effort and the stove is the easiest one plus if u have the butane portable stove that u used outdoor or for camping it’s also the same function. Not too much hassle compared to actual grilling stuff.

Sorry nothing like chilli relleno , chilli relleno is a pepper usually an Anaheim or Poblano etc. That is stuffed usually with cheese. and egg or egg white and flour batter than fried and served with a chilli sauce on top.
This dish is very similar to a mexican dish called “chile relleno” is almost the same way of cooking, only difference is that we stuff “chiles” with cheese or some other ingredient and then we dip it in that egg mix and fried them as well. I find it very interesting that filipino and mexican cuisine have a lot of similarities.

Spain directly governed phl when mexico gained its independence from the spaniards in rhe 1800's
