Use this dahi to set another batch that will turn out fine, this batch is not sour and not tasty as our regular dahi

The milk was boiled first, then cooled down to room temperature as per Indian climate
Put at room temperature overnight? My room temperature around 27C (hot tropical area)

Ma'am, I tried out making curd with 2 green chillies , started at 12 pm in afternoon , still it could not SET AT 8.00 PM EVENING , WHAT TO DO ??
Same happened with me
It takes around 20 hours to set as yogurt starter when chilly is added to milk. Keep it in warm temperature for 20 hours . Once yogurt sets pour the boiled milk into the yogurt starter and place it in warm temperature it takes 10 hours to set as a fresh curd. After set place it inside the refrigerator

Some time in rainy season it takes 2 days too.
Don't use store bought chillis. They need bacteria on them from the environment.
You can also use a pinecone and then use that batch as a starter batch.

It works with powered milk. Disolve powdered milk in water and boil for about 5 minutes. Leave to cool a little but still very warm. Add chili, cover, wrap up with plastic bags and a towel and keep in in warm dark place like oven or microwave for up to 8-12 hours

Raw milk is not safe for health. We recommend that you heat the milk first before using it.

I am pursuing dairy technology, and I live in India.
I can attest to the fact that local sweetmeat shops use the yoghurt culture of last day as starters.
As for dairy firms, they use specially made cultures for making yoghurt.
