    Dude, I wish they would of had this posted 5 years ago when I got my Legacy. Having videos like this will help customer happiness and bring more sales. Keep them coming.

    After having my Hasty Bake Country Clubber for 30 years, I find out with these videos, I have been lighting my fire the wrong way for slow cooks!

      do whatever works for you! These are great suggestions, but whatever you find works with your cooking style is the "best" way!

    Thank you, Thank you. Bought my Gourmet last fall and struggled with fire management. I could not find any significantly helpful tutorials online. This video is spectacular and I trust will greatly improve my cooking.

    I agree with covering meat with the heat shield. But…it doesn’t look like the heat shield is large enough to cover a brisket.

    I found that when doing a "long burn" the safe bet is to check your fire frequently and just add charcoal as needed. With a large amount of charcoal and fat from your meat dripping onto the coals, the temperature can get away from you in a hurry.

      I thought these was designed to have the fat run to the drip pan and away from the fire

      With a heat shield guarding your fire, and a drip rod to carry most grease away, long burns with large amounts of charcoal are achievable. A drip pan also can help depending on the protein.

    What if you only have the b&b comp? Just stack it up on top of each other over and over instead of the little baby pieces first?

      that would work! You may have to account for less airflow by building some voids in the pile. Doing a "log cabin" stack would probably help.

    i really really really want one of these grills. problem is I already have 3 smokers (2 charcoal/wood and 1 pellet) and a gas grill. The wife is already on me about having too many, in which I reply, "You can never have too many grills/smokers." :). She is not amused by that response at all. Sigh, oh well I will just have to "accidentally" click buy now :) too late then isn't it :D

      The good news is, the HB can replace a couple of those for you since its an all-in-one unit. Not that we advocate for having less grills... ;)

    These grills just seem like the vents aren’t big enough to get good airflow

      Five 1" vents for both intake and exhaust = 5" of draft on each side of the grill. That's more than most other grills on the market (Weber is 3", etc). They circulate air excellent. Never any stale smoke and no problem running 180 degrees or 600 degrees.

      The vent holes sure don’t look like they are 5”. That makes me feel better.
