@hastybakegrills when you say you're going to crank the temp up to 300 how are you physically doing that? Opening the exhausts? Raising the bed? Other?

How often do you add wood?
If at all, just once. We put wood in at the beginning and it typically lasts most of the cook. You don't have to add any after the brisket is wrapped as it won't take smoke.
Did you stop selling the sprayer?
It's available in our retail store, but due to limited supply, rarely available online.
