I once was at a vineyard and had a tour of the production facilities where we were shown a huge keg with a mechanical press on the top of it. The tour guide told us that the winemaker in that facility was an old Italian guy who was coming everyday to that facility to turn just slightly the press that was extracting juice from the raisins to make that special wine. I later learned that in Italy it's called Amarone.

Your fermenter container looks homemade........how did you manage to screw the tap onto it? The hole at the top looks to small to enter with the hands, tightening the screw at the back of the tap...

We do not have wine grapes but get Muscat grape raisins. Since Raisins are much drier, how much should be dilution. Or shall I add fresh grape juice to reduce sugar content

I collected more today and I'm thinking about trying this. The grapes are red (look almost black), small and have large seeds. Do you think it could still work to make raisin wine with them? Really amazingly spectacular 14+% alcohol content from only raisin, wow! How long can we keep the wine in the bottle which has not been opened before? And during the rainy/monsoon season, there may not be much direct sunlight everyday, can one still make this wine by drying in oven, maybe at 80 deg C over many days?

I dehydrated mine over 40% and added some water to make it 35-40%. Now it is still fermenting but the colour is not as dark as yours. I hope it’s not because I added some water.

Sir, I also making a home white wine but not raisin wine. I followed the recipe not from your video but from an Indian channel. Just telling you this because this is the first time I make a home wine and ask you for an advice or correct me if I am wrong. The ingredients are 4,5kg green grapes, 2tbs of yeast, sugar 1kg, Cinnamon stick 3 pieces, Cardamom 3 noms, Cloves 3 noms, Crushed ginger small pieces and water 2L. It’s been a week of fermentation now. I keep them on the place dark because I don’t have airclock. The first-5th day I always checked and tasted it and it was a bit sweet. And I didn’t tasted it for two days only keep stir it. And today when I got back to stir it again, I tried to taste it but the taste was not sweet anymore, it was a bit bitter and strange for my tongue..maybe the alcohol got too much I didn’t know. But it still smell like a wine in general. But I will save it from the next 15 days then I will strain it and keep it again for 21 days. Then strain again to separate wine from the sediment. I hope in the early of November the taste will turn to good or something better. If not I think I’d fail because I never taste the home wine before.
P.S: My white wine colour is not brown like yours. It looks like milk and a bit pastel green. I can’t put the picture here but I hope you understand what I mean 🙏

When I started following you about 2 to 3 weeks ago there was no mention of checking the initial cavity and then the final gravity so I did not check it at that time when I put the stuff in the bottle and put a balloon on it. So is it very important that I check the gravity when the furmentation Stops or I can just consume it?
Don’t worry it’s not necessary, only if you want to know the alcohol content 😉
i guess you do several tests, and im curios as some people claims that if shaking during fementation, bad taste are likely occuring in the results.
i dont remember if that depended on the yeast but would appreciate your opinion

Hey hey.... How do I reduce the acidity in my wine... The grapes I used were slightly sour so it's high on acidity... It's a huge batch and I don't want to throw it away.... Please suggest what can be done

quick question, you said that if in a big container we should stir daily with a wooden spoon, but wouldn't they be ruined if got exposed to air and turn to vinegar ?
You shouldn't stir with a spoon you should just shake the whole fermenter like he did in his red wine video and even if you stir it won't oxygenate your wine unless you slosh it around (also after 10% abv its really hard to make vinegar and after 15% its impossible, the main concern is that adding oxygen might introduce off flavours)

I made this last week. 1.5kg grapes and 2.5 litre water. I used turbo yeast. Initial gravity 1078 and final gravity 996. Very dry wine and I lost natural flavour due to turbo yeast but kick of wine was too hard. I was doing experiment with turbo yeast and we should never use turbo yeast in home made 🍷

Hi. If I open the fermenter every day to shake the wine and grapes won't it spoil the wine because of oxidation??
Why should you open it? How big is it?
@@Spectacular-cuoredicioccolato it's about the same size as yours. I did shake it today by keeping the top closed but the fermentation is happening very heavily and the top tried to come off.
