    I don’t take the skin off the zucchini. Love how versatile they are.

      I’ve learned from Trey my husband that zucchini’s are like a gourd and the skin can be very tough on the digestive system so I’ve been peeling them from then on. Not too difficult a step to include so I just do it for the sake of our family

    Like the pancake idea and the stir fry. Zucchini not my fav veg...but zoodles are really good. Carrot zoodles are good also.

    When I lived in the Czech Republic in the early ‘90s my Czech mother in law used to make a loaf cake made from zucchini’s, was common there to make cakes using vegetables from your garden. Naomi x

      Ooh yes zucchini bread is probably the same as loaf cake you add your vegetables and cinnamon! I thought that this cake is too common of an idea to use zucchini’s so I tried other things today 😁

    Lots of comments… I have zucchini and a zoodle maker … hooray!
    In my pre vegan days, loved Trader Joe’s pre seasoned bulgogi … now I eat their frozen vegan version! But now I will try your last dish and see if I can get that delicious flavor. Hope you write a recipe for it.
    Early in video Mercy was showing off her food stylist skills, plating the pancakes.
    Instead of soy sauce, I use low sodium tamari. 😊
    Would love to see how you make the focaccia for a beginner.
    Oh and I also leave the skins on the zucchini.

      Hello Lulu’s Mom! I’ve always wanted to try the Trader Joe’s frozen vegan dishes but we live so far if I brought it back I’m afraid it will melt ha!
      Yes mercy was playing those fritters so nicely so cute 😊
      Ah yes I’ve used organic tamari before also. The tamari does not have a sweet flavor like coconut aminos so you may want to add a bit of sweetness for bulgogi flavor
      I’ve learned from Trey zucchini is like a gourd and the skin can be tough on your digestive system so I always peeled mine from then on.
      Hope you try this out and I will have to make a video for focaccia!

    Good Sunday morning! Zucchini grows like weeds in the summer here. I grew up eating zucchini relish, like sweet pickle relish. My dad put that stuff on everything! I’ve made several batches myself in the past. Versatile veggie.

    Great episode. Love zucchini dishes. The zucchini fritters looked especialy good.
    My mom used to make zucchini boats. Cut in half the long way, scoop out the seeds. Fill with whatever seasoned filling you like, like the beyong beef, or just rice with lentils. Anything that holds together. Put into baking dish with tomato sauce and bake untill zucchini is tender.
    I always leave skin on zucchini, is it just a personal preference? Plus I like that pop of color. I will peel tough skins of cucumbers so.

    Hi Rosa Zucchini is not a popular vegetable here in Jamaica it as to be imported. Imported things are very expensive so i'll just watch and enjoy you do your thing.😊❤

    I like the new beyond products because our family has folks with soy and coconut allergies. The new products use olive oil. Now everyone can eat it. Its not something i buy a lot though cause it costs a lot. Lol

      Hello! Yes agreed they do cost a bit but I purchased ours on sale, the beyond meat we bought are 12oz for under $4 not too shabby and is comparable to regular ground meat! We don’t buy it often but the kids really enjoyed it so much!

      Hi there you can definitely cook it into a hot sauce but we ate this raw! Once you mix it with the sauces it softens up real nice
