I think Merc are saying "trust us to shift faster than you can". As a former racer I'm pretty good at quick shifts, but in this car (I have one) I find that it is much faster to put it in a Sport mode and let it do the shifting (as a PDK would do). When I tried Manual shift mode I found that if I was just a split second late (too close to redline), it would hit the limiter which cost me far more time than having the car do the shifting (which it does very, very well). So as much fun as it is to go full Manual, better times come from Sport/Auto. And it does a great job as you are decelerating too, blipping the throttle and downshifting with some lovely snap, crackle and pop. All of that said, the paddles are still, always working. So you can still select a downshift or two whenever you want, then let it do the upshifts. Like all luxury car reviews, they are forced to be very, very picky (love Mat, just the way it is).
