You do need an acid to counteract the baking soda in this recipe. That’s what the buttermilk does, plus it makes a tender cake. You can substitute it but not with plain milk. Here’s what you can do: You need to measure out the cup and a half of plain milk then take out a tablespoon and a half of it and replace that with a tablespoon and a half of either lemon juice or white vinegar then mix it up. That will make a buttermilk substitute. It won’t be exactly the same but it works in a pinch.
Where do I find that size baking pan? I looked on your website which said I could make it in an 8 x 8 pan or a loaf pan if I double the recipe but that defeats the purpose of making a small batch.
I baked this in a 13x9 inch glass pan. There should be a link to a baking dish that size under the heading ‘Supplies Used’ in the blog post. These pans can usually be found on Amazon.
It really needs to be a more acidic liquid (for the best texture and because of the other ingredients in the cake), so buttermilk is best, but If you can't get it, you can substitute with this sour milk recipe: For every one cup of buttermilk called for, fill a measuring cup with 1 cup regular milk, take out 1 tablespoon and replace it with 1 tablespoon lemon juice or white vinegar and stir well. Let sit for five minutes, then it's ready to use. This will not work exactly the same as buttermilk, but it can work in a pinch and is better than just using plain milk.
Self rising flour already has baking powder in it and AP flour does not. It’s not going to sub out exactly right in this recipe because essentially 3 cups of it would be adding in 3 teaspoons of baking powder and this recipe only calls for 2 teaspoons and also calls for 1 teaspoon of baking soda (which is needed because buttermilk is an acid). If you then went and just added in a teaspoon of baking soda, that would possibly be too much leavening and may have a soapy taste because of too much baking soda. Essentially what I’m saying is it’s not going to be the same if you use self rising flour but if you’d like to experiment using it, feel free to do so but do not add in the baking powder and salt listed in the recipe and probably only add in about 1/4 teaspoon to a 1/2 teaspoon of baking soda instead of the full teaspoon. I have not experimented with this though so I can’t tell you if it will turn out.
I got it from the KitchenAid site a few years ago. They have sales from time to time so you can usually just wait until the sale and grab one for a better deal.
This recipe seems to be just like the one that was originally made by Brandie from The Country Cook website. If it is, then I think they should be credited appropriately for their original work.

Can we use regular milk, instead of the buttermilk?
You do need an acid to counteract the baking soda in this recipe. That’s what the buttermilk does, plus it makes a tender cake. You can substitute it but not with plain milk. @@IScreamforButtercream I’m so sorry! I meant to put this comment on a previous video I watched from another channel!
Is milk okay if I don't have buttermilk for the batter?
It really needs to be a more acidic liquid (for the best texture and because of the other ingredients in the cake), so buttermilk is best, but If you can't get it, you can substitute with this sour milk recipe:
For every one cup of buttermilk called for, fill a measuring cup with 1 cup regular milk, take out 1 tablespoon and replace it with 1 tablespoon lemon juice or white vinegar and stir well. Let sit for five minutes, then it's ready to use.
This will not work exactly the same as buttermilk, but it can work in a pinch and is better than just using plain milk.
Good. A bit crumbly. Center collapsed. Avoid putting topping globs to n center of the cake. Like cinnamon but a tablespoon is max.
If the center collapsed, it’s possible it may have needed to bake a little longer. Ovens vary. Not sure why that happened to you though.
Would it work ok if I use self rising flour instead of ap?
