    On the totally unhealthy fruit front, my older sister and I used to dip our bananas in raw sugar as a snack... that was when we weren't just eating straight golden syrup lol

    Claudia, I can totally relate to your coconut oil story. In Australian summer it's a liquid! Very messy! Turns hard in winter though! You have to chip away at it!

      Long time viewer. I have just been diagnosed after 19yr of searching for answers with fibromyalgia and chronic pain. Can u make a video for people who are NEWLY DIAGNOSED...maybe how you explain to family that u REALLY DO have a condition and maybe how to explain what u can do etc ... or like... things people could learn to help or tools you recommend to help you. I also have chronic migraines and I'm finding your diet coke trick works. Looking for tips.
      It feels so good to have an answer for myself but also so people finally believe me when I say the pain is real.

    clicked ASAP. my aunt's a ukrainian immigrant and the very literal magic she's brought into all our lives is the combination of a beautiful soul and the MASSIVELY important, vibrant culture that raised her. she & her church have been hurting deeply, and to see such pure love and light drawing aid towards some of their pain would be comforting for her, i think ;v; thank you so much

    I am new to baking and I was confused with the "room temperature" thing before too. And I was told that "room temperature" means 25°C. Coconut oil turns to liquid above 24°C. So I guess maybe it means you need to warm it up a little before adding it in the batter? Anyway it's very sweet for your donation. Wish the war ends asap.

      Interesting, I was always told that "room temperature" was 18-20⁰C. In school the teacher stressed that kitchens are often warmer than room temperature due to cooking. I have experienced why in my kitchen, as the butter I leave out sometimes becomes too soft for baking.
      I have no experience with coconut fat, as we don't use it in my household.

      Uk room temperature usually 18 to 20 degrees C until a few weeks in the summer when it rises above
      When I studied chemistry lots of the textbooks stated standard room temperature as 25 degrees C
      Our teacher said that in the US they liked warmer rooms! Not sure if that is true.
      My coconut oil is solid virtually all year round

      "Room temp" in baking just means *not refrigerated*. Notice the recipe uses the word "soft" when describing how the coconut oil should be, that means it should still be solid, you wouldn't describe a liquid as soft. You'll hear "soft" or "room temp" for butter as well. If you've ever tried to whip refrigerated butter you'll know how important this distinction is! Also yeah room temp is 18-21°C. Even if your living space gets 24-28°C as mine does sometimes, people pretty much never mean the literal temperature your home happens to be at, so you have to use your judgement as to whether the temperature is appropriate for temp-sensitive ingredients like butter or coconut oil.

    Tip for the hardended coconut massage oil! I have the same issue with the coconut body oil I get from Hawaii and bring back home to Seattle. But I pop the bottle in the tub by my feet while I shower, so the warm water from the shower heats up the oil. Then by the time I'm done with my shower, the oil has liquified again and it's ready to be applied. And if you want to use the oil but aren't taking a shower/bath, just run the bottle in the sink under warm water. If worried about bottle leakage, stick the whole bottle in a ziploc baggie to catch any oily leakages.

    I love Claudia enthusiasm but I literally can't handle anything that has coconut oil in it because where Im from coconut oil is used as as body oil, and not for cooking. So seeing recipes that uses coconut oil in it is so bizarre to me lol. So sorry Claudia, my vote is for Jessica cake😅 But on the plus side, they do both look delectable😍

      I mean, in the US, there's lots of beauty products with coconut oil, but it's also a great cooking oil. It's not as popular in general but I'd choose it over "vegetable" or canola oil because of what my research has revealed about both. Unless you store coconut oil in a really warm or hot environment, you do have to melt it for baking as it becomes solid at room temperature (75 degrees-ish) or colder. I believe typically coconut oil for bodies has gone through extra processing (fractionation) to make it more suitable, such as remaining liquid and not becoming solid, as well as being non-greasy. There's also refined and unrefined coconut oil.
      You probably didn't really want to know all this, but 🤷🏻‍♀️😅

      @@MadCheshireHat I live in the U.S. myself lol. Also I’m well aware of the different properties of coconut oil. My mom family makes coconut oil fresh from their own harvested coconuts for a living on the island I’m from. So thanks, but your talking to 1 person who was raised around coconuts her whole life lol. I was just meaning I’m not used to it being in food. Coconut milk, and the coconut meat itself has been used in PLENTY of my culture cuisine, but never the oil itself. To my culture, it’s more useful used as a sort of a beauty “serum”, rather than used for cooking. Using coconut oil on your skin has a LOT of beauty benefits😊 Highly recommend.

      @@MadCheshireHat also the “body” coconut oil your referring to that doesn’t solidify is processed coconut oil, my mom family calls that no good, they say REAL beneficial coconut oil that you should use on your skin is the ones that still solidifies. That’s how you know it’s good. You just grab a piece, warm it in your hands, then get to rubbing. We use coconut oil in a lot of wound treatments as well. So you see why I say it’s weird for me to use it in cooking. We already use it for everything else outside of food lol.

It makes perfect sense to me that if you have certain cultural uses for something and someone uses it for something else, you may find it weird. I wasn't criticizing or commenting on that. It was just the fact that it seemed like you were very unfamiliar with coconut oil in cooking that I was addressing and expanding upon.
      I know that coconut oil is processed. That's why I said the fractionated coconut oil has been through *extra* processing. I've never used it and if I were to use CO for beauty/skincare, I'd dip into my giant jar of cold-pressed unrefined coconut oil since I already have it on hand. I don't use it for cooking since I usually don't want the coconut flavor, but I will in baking. I also have used it for frying doughnuts; I find it works really well for this purpose. I also give it to my dog and have brushed his teeth with it. He LOVES coconut oil, so it makes the job easier! CO is really common with people who feed their dogs a raw diet and people who use more holistic or alternative health care for their pets. I know some people put it on their dog's scrapes. I've used it for that on myself as well, particularly rope burns. I've been contemplated trying to make a CO hair mask because the hard water here severely dries out my scalp.

    "We both baked something edible" 🤩 🤣😆 is the consensus. Which is far better than the FIRST attempt by me to bake from scratch with dry yeast and a new recipe. It was great mixing till I got to the dough. I do not knead dough successfully I found. Buns turned out inedible. They did not rise and were little dry lumps. 🧱🥌 Next time I follow Jessica and Claudia's work, it will be edible. And, premade mixes are a pretty good idea.🧱 THANK YOU for helping Ukraine children, it is very easy for us to donate, too. 💞💞

    Um Claudia I did exactly that. Somehow considered it healthy because I was eating fruit and am a picky eater
    But I didn't even bother with icing sugar, just lemon dipped in granulated white sugar

    It's wrong assuming of people , thinking dentist do not eat sugar ....... dentists are people too and they need food , the reality is gluttony is harmful thing on your body eat sugar or not all you need is balanced diet

    Carrot cake here looks so different!! My grandma's recipe is so delicious, and it may sound weird for you but we cover it with chocolate (we mix sugar, chocolate powder (the one we mix with milk to drink) and butter and heat it til it boils, then pour it over the cake, it will get crunchy and delicious - usually we do it 2 times because we like extra chocolate!!). Seing you put this white icing with actual carrots over it... That's weird for me lol

      in the US, usually a cream cheese frosting is used. That moisture goes so well with it.

    Love this fun video! ☺It's wonderful that you are doing this for a fundraiser. You and Claudia both did a great job on your carrot cakes.☺ When Jessica kept saying "bloody", I had to smile because it reminded me of my mother telling me about her British grandfather (my great-grandfather) whenever he got mad, he would say that word. LOL I enjoyed the parts where Claudia was talking about her sweet tooth for lime juice and sugar, and that Jessica was screaming. LOL Again, thank you for another enjoyable video. ❤

    I have an idea for a baking bad episode that Claudia might also enjoy! My sister used to host "pancake parties" where they broke out the griddle and made a huge batch of pancake mix and people would bring things to mix in and make their own custom pancakes. But here's an added twist! Use a waffle iron and you can also waffle-ize other foods like noodles, rice mixed with eggs or waffle mix and other ingredients. And then top it with a frozen whipped cream and complimentary things added to top it off. It would be a fun experiment with flavors but also do a fun traditional waffle with cream plating. If Ruperts interests are at that level he might also have fun participating! Lol I have a niece and nephew around his age and my niece would love to participate, and my nephew would just love to eat it.

    How can the mix be dairy-free and have some milk in it at the same time?
    I wouldn't have thought a pre-made mix would require so many extra ingredients. It reminds me of a story about a stone which could be used to make soup, only it required all the ingredients you would normally put into a soup. Great work, both of you! And it sounds like you had a lot of fun with that coconut oil.
    I enjoyed hearing the dentist's dark confession. 😆

    Someone has probably already said this but coconut oil does harden and resoften in different temperatures. You can microwave it to get it back to that liquidy temp

    Lol on Claudia's defense (I'm a register dietitian and nutritionist) my family has always eaten limes with salt (that makes perfect sense for me since I have EDS and POTS) lol

    Coconut oil will melt at about 23.9 C (75 F ). So you can microwave it for a bit, or stick it outside in the summer.
