  • Chef/fisherman John Iha of Gochi Grill caught an O'io (bonefish) here on Oahu. He shows us how to scale it without making a mess, drops some knowledge about bonefish, and shows us the how & why of scraping it.

    Scale the fish under water then you don't have to worry about scales going everywhere.

    Toothpaste method more bettah. Remove the head, remove the guts, then freeze. Unfreeze, and then use a rolling pin and you can just toothpaste out the meat only.

    Scale it underwater in the sink & save your Saran Wrap! 😉

      Exactly what I was about to say. No scale fly up under water.

      @@lisarichardson8060 Scaling under fresh water ruins the meat, especially oio. If you scale under water, it needs to be done at the beach in salt water.

    Why are u scaling the fish if u are just scraping the meat off? Do u use the skin?

    • @dylanlaakea
      @dylanlaakea ปีที่แล้ว

      The scale will come off in the meat you can leave the scale but you will have to pick them out.

    • @user-sg8kq7ii3y

      Also VERY hard to fillet with the scales on. The scales are very thick. Knife cannot slide through as easily with the scales on.

    I really think you didn’t have to scale the fish since you don’t cook it with the skin.

    • @user-sg8kq7ii3y

      You need to scale it (at least the top and the bottom of the fish) or else it will be very difficult to fillet it. Bone fish have big scales. The scales are like armor, which makes it difficult for the knife to cut through when trying to fillet. Also, if you scale it before cutting it there is much less chance that scales will end up in your fishcake.

    Bonefish is for sport fishing as fly fishing not for food…
