    I swear the instapot has upped my rice game. My coconut rice used to be gummy but not anymore.

    Pretty neat that the dark coconut sugar didn't make the rice look muddy. I've made macaroons with it once and it was yucky looking. Thanks for this!

      That’s because it’s super little. If you were to add more if would definitely stain it more.

    Making this tomorrow, I have no canned coconut milk, but made some in my VitaMix using desiccated coconut, going to make it with Teriyaki chicken 👍🏼

    if you are doubling the recipe I know you double the liquids, but will you also double the sugar and salt?

      Yes, you double all ingredients but keep the cooking time the same.

    Is your sugar really that dark red? That looked like paprika.

      Coconut sugar is super super dark yes. You can use brown sugar as well if you prefer.

    Can I use brown rice instead? I think so, but you didn’t mention it

      I haven’t tested it because I’m afraid we’ll get the burn warning. Brown rice takes 22-24 minutes on high pressure plus natural pressure release and long cooking times like that are a bit too much for coconut milk

      I'm sorry I don't understand the question. I recommend taking all the rice out at once or else it sticks to the bottom.
