Instant Pot Coconut Rice Recipe
Ingredients:
1 cup jasmine rice, rinsed and drained amzn.to/3k5BOvB
¾ cup Maika’i Organic Coconut Milk
¾ cup water
1 tablespoon sugar amzn.to/3MxAWw9
¼ teaspoon salt amzn.to/3vbiPWQ
Directions:
1. Add the rinsed rice, Maika’i Organic Coconut milk, water, sugar, and salt to the Instant Pot. Mix until well combined.
2. Place the lid on the Instant Pot and set to sealing. Press the rice button and cook for 12 minutes. Allow 10 minutes natural pressure release.
3. Open the lid and fluff the rice. Serve alongside your favorite protein and ENJOY!

Thank you for the idea. This gives me a way to finish off that can of coconut milk. I use a Chicken Satay package that uses Coconut milk, but not the whole can.

This version of the Instant Pot does not pressure cook the rice. It's the setting that comes with the Instant Pot. Haven't changed it.
