- Thia is my husband’s favorite recipe. He loves it. This is a great way to use up your zucchini from the garden. This will work well with fresh or frozen zucchini.
Recipe:
25 cups grated, salted, drained zucchini
6 to 8 cups mixed peppers
8 to 10 cups chopped onions
4 tbs red pepper flakes
4 tbs dill
2 tbs nutmeg
2 tbs mustard seed
6 cups sugar
8 cups vinegar

The National Center for Home Food Preservation is a wonderful resource. I check this site every time I can anything. I am not affiliated with them, but they are a free resource that I recommend.

I make zucchini relish every other year. I like it best over pickle relish. So beautiful in the jars. Blessings 😊
Canning up your Christmas Jam today. I made it last weekend and it was a huge hit with my coworkers. Thanks for your wonderful videos! I enjoy watching them!
