      Yes I did, I was just about to post a comment about that (I'm such a pedant). I have a metal spatula for my wok but I'm in the market for one for use in a non-stick pan, ideally with a long handle, a good angle between the head and handle, and not one of those overly flexible ones.

      A few other go-to meals I like are; mince & dumplings, Chilli con Carne, beef kofte kebabs, hot pot and lasagne. Nicky's fried rice looks great too!

      @@cookieinthewoods forgot about lasagne, I make that a lot. I find I have to heavily cover the mince with a sauce or spices etc because it turns my stomach seeing it all grey in the pan 🤢 They all sound great, the kebabs sound like a winner. 😘

    This is a great way to serve meat and rice. The same method could be used with any leftover meat but mince does go very well. Love the dishes you prepare - I envy your family as they clearly eat very well indeed!

    I cooked this today. I didn't have the lemon grass paste. I just used ginger instead. I also did not have the hoisin sauce so used oyster sauce instead. I added red 🌶 and served with chilli sauce. Was wonderful!

    Great idea, I'm going to try it tomorrow night. I love the look of it just as is, but am also keen to try it with some proper Szechuan pepper and a few peanuts for crunch.

    That looks like it is loaded with flavor. The key is having the discipline to really sear the beef - let the moisture boil off and let it go a little past your comfort zone. It will be well worth it at the end.

    Hello Nicki, yes I did notice the metal spoon, I thought why metal in a non scratch surface, she like to live dangerously!!! I know this dish, it is very delicious, but I have not made this for many years, it is so versatile especially adding the peas. Certain members of the family does not like textures so to please and keep the peace we change our recipes, mothers know how. Viewers should try this recipe it really is delicious and hardly any containers for washing up afterwards. Thank you I give your 5 stars for this recipe. Keep well, kind regards.

      Thank you, Its actually a carbon steel wok not one with a non stick coating so its all good with a metal spatula.

    Oh wow! I swear last night I made a recipe extremely similar to this! Only, it was beef, cabbage, and onion stir fry!! And I used heavy black pepper and Worcestershire sauce with a sprinkle of cane sugar! I thought I made it up 😔 but apparently it wasn't that original 😭😭 I need to make a cooking channel, so I can show off my talents of " broke girl making a reasonable facsimile of a clearly professional recipe" 🤣🤣🤣 while I feel threatened and intimidated by YOUR recipe, I adore your channel and enjoy your vibe... I'm happy to see how much everyone around the world can come together over food!! 🥰🥰

    Made this tonight and it was delicious. Could not find lemon grass paste so used fresh lemon grass sticks (which I removed at the end) and added some ginger paste cos normally it’s used a lot in such recipes and had just received it lol

    Eggs in first, cook, then add rice, then add peas. It works. Believe me.

    I’d love mine a bit burnt by blasting it on high heat for a couple minutes between tosses to give it more Wok Hei for an incredible full flavour!

    I would have liked to see a tin of mince beef with onion used. Also, surprised no onion was used. Doesn't need it though folk would say. Thanks for the simple recipe.

    Why the lemon juice! I do it and love it. I lived in SE Asia for a few years and never saw lemon juice added to the fired rice. Just curious?

    I'm very fussy when it comes to mince beef. I think it needs more time in the pan otherwise the texture will be quite hard.

    HI Nicky. A great recipe!! Did you drain off the fat from the mince when frying it? Whenever I try to 'brown' mince, it usually ends up swimming in fat and water!!! Hope all is well with you and the family. Peter A :) :) :)

    Going to try this recipe, but going to bulk the mince base out with diced onions, probably around 4:1 mince to onion. So half a large onion?

    I love this channel but she does tend to use a lot of ingredients in things that most people don’t have. Like lemon grass paste? Who has that. I know I know that we don’t have to add EVERYTHING she’s puts in. But it’s just the point I’m making about her recipes. That she does this quote a lot. Still love the recipes though.     Why do you call it 'minced beef' when it is clearly just 'ground beef' with no mince flavorings added to it. It is really misleading to American viewers when you folks call something 'minced' when it is just ground. Just for clarity sake.
