The food of Mexico is so fresh and diverse, for the most part, unrefined and not GMO'd, like the over processed crap we call food in the US, took me a while to get used to the chili and spice but actually makes u healthier.

Mexicans should credit spaniards and moors for the way they shaped their food. Locals did not have chorizos, cattle (they can thank Gregorio de Billalobos for that), queso de Oaxaca, etc. Saying that this is a thousand years cuisine is like saying burgers have thousands of years because they use bread.

I'm from Oaxaca I was born there when I reach age 6 my parents brought me to the U.S I must say I really enjoyed this video alot! Mexicans should credit spaniards and moors for the way they shaped their food. Locals did not have chorizos, cattle (they can thank Gregorio de Billalobos for that), queso de Oaxaca, etc. Saying that this is a thousand years cuisine is like saying burgers have thousands of years because they use bread.
