INGREDIENTS
3 cans clams (6.5 oz) minced
1 pc onion (medium size) minced
2 stalks celery diced
2 pcs potatoes (large size) cubed
2 cups water
3/4 cup butter
3/4 cup all-purpose flour
1 quart half-in-half cream
1 tsp salt
1 tsp ground black pepper
1 tsp parsley flakes
INSTRUCTIONS
1. In a large skillet over medium heat, put onion, celery, and potatoes. Drain juice from clams and then add water. Cook for 15 minutes then remove and set aside.
2. In another saucepan, melt the butter. Add all-purpose flour then whisk until smooth. Slowly pour cream and stir constantly. Cook for 5 minutes.
3. Add vegetables and clam juice mixture. Simmer for 5 another minutes.
4. Ready to serve!

Too thin for my taste
So, my wife loves Clam Chowder. It's her favorite thing in the world to eat. I have made it a few times for her, but I wanted to find something a bit more New England style. Which this is. I just made this for her and she loved it. The only thing I changed was instead of water, I used Chicken Broth and added some green onions for the last five minutes of cooking. It turned out fantastic. Thanks so much for the recipe!

@@dianaj.3377 Yeah all I did was remove the water, and add in the Chicken broth instead. I believe it called for two cups of water, I just changed it to two cups of broth. Really gave it a fantastic flavor. Hope you enjoy the change :)
I'm a Korean American and I made this yesterday. I used chicken broth instead of water and added bacon bits. OMG, It was a hit. My son said it was better than the one from our favorite restaurant. Thanks for this great recipe.

Throw in a little piece of salt cod it is a total game changer!!! But you definitely need to let it soak for a while or at least boil it down one time or perhaps two🤙🏽 But it will change your fish or clam chowder hundred percent

As a New Englander, we grew up with clam chowder or fish chowder, and I love them both! But for years now I only see people making clam chowder and I’m like what’s up with the fish chowder that’s a really big thing! N sooooooooooooo good!

Not the best way. First fry diced up bacon, remove from pan when crisp, set aside on paper toweling. Then towel out or pour off most of the bacon grease and add the butter, saute the onions and celery in the butter till just soft and translucent. Add the flour to the onions and celery, stir for a minute or two. Boil the potatoes in separate pot in clam juice for about 10 minutes then add to the onions, celery, flour mixture. Add the clams, cream, fresh thyme, bacon, salt if needed and pepper. Simmer for a bit and serve. Never add plain water, if you need to add more liquid and no extra clam juice on hand use chicken broth or milk.

Why would ANYONE use canned clams? Go the market and purchase fresh Clams! Have your fish monger save the liquor and do not EVER half ass your chowder with canned anything!!

I hate to rain on this parade but this is not how you make clam chowder. No bacon? Water instead of broth? Thickening with a roux? What? I am not even from New England and I know better than that. There is another video where a chef at the old salt restaurant makes clam chowder. That is the way you do it. And don’t be overly concerned with thickening. People from New England eat their chowder with a bit more milky consistency, not like other parts of the country where it is like gravy. In fact, I learned from a New Hampshirite and he never added any flour to his clam chowder. If you want really, super thick clam chowder (AKA Clam Gravy) then do yourself and the poor clams a favor and brown some sausage, add flour, add milk, stir until thick, and plop it on a biscuit. If you just gotta, then throw a a clam or two on top. 😊

Wrong wrong wrong. Sorry but a good soup or sauce should be done like building a house. From the ground up. Salt pork cooked down to release the fat. Add additional butter on medium low heat. Add your veggies, cook till tender. Add your flour slowly till moisture cooked out and add your warm liquids slowly while mixing. Add your clams, potatoes seasoning and thyme. Simmer till potatoes are done and chowder has thickened to your liking. Toss in a tad of sweet sherry. Take it from a former chef who made 50 gallons weekly

Addendum: it does look as though they eventually DID incorporate butter to make a roux (although they didn’t even cook it and immediately mixed in the cream… leading to a super “blonde” roux with a floured flavor; not what you’re looking for).. they should’ve (imho) changed up the steps a bit.. but to each their own.
This is the difference between cooking from EXPERIENCE, and cooking from rote repetition, I.e. just reading off a recipe card 🙄

Nothing against this recipe; personally, I prefer to sweat/sauté my veggies and taters with a shortening… I.e. sweet cream butter or vegetable oil.
It gives them a nice caramelized exterior and adds to the flavor 😋

Texture was good, even with milk instead of half and half. I can taste the flour a little bit. The presentation looks good as well. Overall a better clam chowder than what I normally make. Next time I'll do this and add a bit of bacon to it.

Here is a suggestion - instead of using flour as a thickener - use dried potato flakes and stock - potatoes are already in the recipe; using stock and potato flakes will not change the taste

The roux was very blonde. If you cook the roux until it browns a little you will cook the raw flour taste out of it. Careful, you do not walk away from a roux while it is cooking or it will scorch.

Measurements
What I did, sautéed the onions, celery and 1 cup of slices bacon in oil, added one cup of butter and 3/4 cup of flour in my soup pot and whisk it, added in my Sautéed vegetables and added 4 cups of chicken stock and 2 cubes of chicken stock, added 4 1 pound of canned clams and the juice, let simmer for 20 mins on medium heat, cubed up around 8 medium sized potatoes simmer until the potatoes are cooked, add in 2 cups of half and half creamer and 2 cups of milk, simmer for 1 hour at low heat keep stirring every 20 mins, shut off heat let cool for 20 mins and enjoy

I owned a seafood market where I made Clam chowder just like that, but I use real chowder clams. I would put the clams in the freezer for the night then take them put them in the sink and they will open enough where you can put the clam knife inside the shell, save all that real delicious clam juice and take them out of the shell.
