DOWN-HOME BREAKFAST: EGGS, CHORIZO & POTATOES/Breakfast Burritos/Huevos con Chorizo y Papas

  • Thought I'd shoot a few Down-Home Breakfast videos for you, and I'm kicking it off with Eggs, Chorizo and Potatoes. It's something I grew up on, and therefore, I make all the time. In Spanish, we call it Huevos con Chorizo y Papas, and often we turn it into a Breakfast Burritos for eating on the go. There's not much to it, so I won't have a written recipe for you this time. But I hope you enjoy the simplicity of how it's made and that it gives you an idea of what to make for breakfast.

    Our typical favorite Sunday breakfast! We now use "soyrizo". It's delicious!

    I just died and went to heaven. My favorite breakfast. OMG. Love Peyton's chorizo, the best. And I also love to eat mine like you do, from the plate, colored and no Styrofoam either. Aprovecho.

    Enjoyed the video. Down to earth Mesilla Valley style home cooking. I'm a person who has made a conscious decision to return to home made. So I prefer making my own tortillas (flour or corn) and even bread such as bolillos. Found your channel when you featured Hatch Chile. been following ever since. Would love to see recipes such as menudo on your channel.

    Hi Marcy, i enjoyed this "real and authentic" type of video. I made this same breakfast just the other day. My mom has her enchilada Fridays as I remember. Usually red enchiladas with a side of beans. I enjoy putting an egg on top of mine now. The great memories we have of comfort food as we were growing up. Keep up the great content and yummy food.

    This looks so yummy. I grew up in New Mexico and now live in Vermont. It’s hard to get food like this here so a great instructional video on some everyday food is just what I need to get inspired to make it myself!

      Amén!! Next to menudo it's the breakfast champions. I usually do my "papas con chorizo" mixed together. Scrambled eggs and good ol' beans on the side. ,😋 Oh and top it of w a nice cold glass of red label lac-taid. Yes, m

    Your family introduced me to chorizo and we've been friends since! My mom half bakes her potatoes the night before for breakfast papa's. My favorite breakfast burrito to this day is still chorizo, Papa's, green chili and cheese burrito ( you know me and eggs; still...) . Thanx for the memories!😉

      When I first read that it was your favorite breakfast burrito, I thought “Dennis eats eggs now?” But then I kept reading and realized I had missed something. Of course, you had left out the eggs. Lol That’s probably the one thing we eat most in our house.

    Marcy, I am able to get fresh made chorizo at the near by Super Mercado grocery.
    Also, Hatch chilies!
    Oh, and that burrito looks like New Mexico! ❤️

      Thanks so much. My cabinets are filled with all kind of colored and patterned ceramic dishes. They make me happy. It's unfortunate that in food photography, sometimes the food gets lost in it. Lol I appreciate the kind & encouraging comment. You must be from New Mexico.

    Good morning Marcy, that was something for me to learn from.... potatoes per person.. cuz I feed a large family and it is true sometimes you don't make enough and sometimes you do.... so I'll go with what you just said thanks... and I'm going to try your recipe so we'll see how it comes out right now...     Everything looked delicious! I agree on the tortillas! I am proud that I can make them myself, but when you find a good brand or tortillería, why not? My family tends to like papas con chorizo instead. This way, everyone can have the eggs the way they want, fried or scrambled.

      Thanks for saying that. I thought people might knock me for it, but I wanted to be honest. I learned how to make tortillas when I was 13 because I grew up with a mom who made them fresh every single day. The way I see it, so long as I don't forget how to make them, I'm still okay. Lol

      @@marcyinspired1442 Well, i will go a step further and admit that sometimes I use canned pinto beans when I don’t have any frozen. And, to top that off, Young Guns makes an awesome bottled red chile that tastes like the one I could make from pods if I wanted to.

    I was looking through your videos for a Red Pickled Onion recipe but didn't see one. Could you in the future make a video of your version of red pickled onions, possibly with green chili in it. Thank you...

      I'll have to ask my mom for help with that request. She used to pickle onions with jalapeños & carrots but it's been too many years for me to remember how she did it. The closest I've done to that is a cabbage curtido. It's really delicious.
