I'm a bit new to Tekken, whats the benifit of Sidestepping mid combo? Does it make the combos easier or something? Like at 1:07, why wouldn't i just run up and f4
The alignment of the combo is important and can matter if the combo hit's or not. Usually being on the right axis for combos with jack is preferable because of consistency and increased damage options.

GAM1 only tornados during heat right?
Doesn’t tornado, but floats them much higher for easier combos compared to regular GAM1
