We’re I used to work, we had a steel fabricator from Alabama who drove his cooking rig up to NY and put on a whole hog barbecue for the entire population of our corporate park 1 million square ft with lakes and woods for 3-4 days all to say thank you for the works he got from our tenants. That man could cook!!
Low and slow whole hog dosen't need any sauce. The meat and smoke completely speaks for itself. The dry rub can make a difference, but salt and pepper can stand alone as well, or no rub at all. The fats that are rendered inside that skin and self-marinate the meat still make it heavenly.
Not 'the Carolinas ' western NC has tomato in theirs, it's eastern NC with vinegar. The heathens in SC claim their mustard based sauce is bbq, bless their hearts.

I love bbq but down here the best bbq, in my opinion, is from restaurants that most folks have never and will never even hear about most likely. For instance my favorite southern Italian place in all of the South is advertised strictly by word of mouth according to the owner. And hot dang is it actual fire.
The church, just down the street from us, does a whole hog bbq social every fall. We just had it Sept 24th. So good no sauce required, though most of those in attendance still put sauce on it. As a self-acclaimed home chef, I hate it when people add sauces and spices without even tasting a dish first. Just sit down and grab the salt and/or pepper without even tasting the food? It like a slap in the face to the cook, thinking they can't season properly. At least taste it, then if it doesn't have enough for your taste, add something if you wish, but don't assume. You know?

I've had buried roasted hog wrapped in banana leaves in Hawaii. The coals stuffed into the body cavity, hog wrapped in banana leaves and what ever else they did to it, and then buried in the ground for hours. The meat was so tender and sweet. No sauce needed, but a pineapple and coconut based chutney, on the side, went very well with it all the same.
As most Americans in the U.S. turn their noses up at the thought of eating dog, this was a risky comment. But having had German Shepherd in Hawaii, I have to say, if you don't know what you're eating until after you've had it, that was some of the best meat I ever tasted. Having said that, I still don't think I could find myself killing a dog for dinner anyway.
