I love baking cobbler batter by melting the butter first. My blueberry lemon cobbler has this style batter also and it is amazing. I feel ya. If you slice your apples thinly enough you don't need to peel them. When apples are thinly sliced, the peels cook and soften, so they're barely noticeable. Try this and I'll be over to taste test.
