I made this last night. Absolutely delicious. The caramel is a small extra step that i think really brings this to another level. The only thing I would mention is if the baking temp and basic instructions could be in the video description that would be amazing. I dont think this is in either of the books so I really had to follow the video along, and even though I watched it a few times added written instructions would have been amazing! Much love Claire, thank you for everything you do!
Just wanted to say, you've become a safe place to go for years for me. Your voice always calms me down for some reason, since the beginning, I love seeing your journey, it makes me want to continue when I feel down. So whenever you feel down, remember that journey and how far you've come and how proud you should be 💕
This will be the first Autumn without my Nana and Apple Crisp was her signature dessert. I have her cast iron pan now, so i am bittersweetly looking forward to making this recipe. As many can probably understand, recipes hold such a special part of nostalgia, and this one is precious. Thank you, Claire
It's interesting when you talk about what makes a good cooking apple. In the UK our most commonly used cooking apple is the Bramley. It's practically inedible raw as it's INCREDIBLY sour, with a thick skin. But it cooks down to tender pieces of apple surrounded by apple sauce. Not in a mealy way. Makes me wonder if there's an episode where you bake a whole load of apple pies with different apple varieties (try and find bramleys if you can - you can get them in the states, just rare) and get some blind taste testers to see what they like about each of them. Apples are just the best fruit!
14:47 in my opinion there is never too much crumble topping. whenever i make a crumble i find i normally double the crumble because it’s the best part!
I like a mix of Cortland with either Snapdragon or Granny Smith. Unfortunately, it's almost impossible to get Cortlands here except the maybe 1-2 weeks a year the Wegmans has them. I grew up just north of Cortland so ate a lot of those growing up.
Claire does the best partnerships with such great brands that seem trustworthy and something she 10000% uses it feels authentic and I appreciate that so much
Don't form parasocial relationships with your favourite TH-camrs. Even the best ultimately need to pay the bills and might take sponsors that aren't good value.
This is exactly what I’ve been looking for.. a delicious, warm apple pie with a crumble rather than a pie crust lattice or something and also not stressed about whether the “slice” holds together or not because it hasn’t cooled enough.. I love it I’m thrilled 🥰
Just made it, but I only had 1/2 a cup of oats, so completed the 1 1/2 with cornflakes. Completely works!! Worked perfectly and in nearly a 20 min prep, you can chill while it finished in the oven. As always, thanks for sharing such awesome recipes. 🙌🏼
@@saraoo964 I chilled it on the refrigerator for as long as I cooked the apples, around 20 min. It is so the butter has time to firm up, so there's actually crumbles and not a soup of butter, oats and sugar. Hope this makes sense.
I found this video's vibe so peaceful, and brilliant production value as always. I love apple desserts, and this reminds me of a recipe my mom and I made in the 90s which also had quinces (I'm in South Africa!) and pears in it along with the apples.
I made this for my boyfriends birthday as we had just gone apple picking, and it was a HIT!! I used a Dutch oven instead of a skillet, and it worked just fine. Easy to follow instructions and everything I used I had in my pantry. This is going to become a staple fall recipe in my house!! Thank you.
I may never fuss over making a pie again!!! This is incredible!!! I made this today. I almost didn’t trust the process by adding cinnamon to the apples… so happy that I didn’t. This is so easy and I WILL be making this again.
I made this today for my English family~ they loved it! The caramel was a bit tricky- I've never made it before, but the end result was just fine. Thank you, Claire.
I forget what recipe it was where I first saw Claire's technique for coring and slicing apples, and it's been such a game changer for me. That, and cooking the apples before baking them in a crisp or pie to help manage the juices. Thank you so much!
I just made a scrumptious Dutch apple pie with an assortment of apples from the farmers market. It's a recipe I've had for years. I love a streusel topping. I will try Claire's crisp recipe next time and it will be much easier, with no crust and the precooked apples. I'm sure the caramel will be a delicious addition.
I love that your videos come out on Thursdays because I’m usually grocery shopping. I just pause the video at the ingredients list and just get what I need. It doesn’t matter what the recipe is because I know I’m gonna love it. This year I’m gonna make your apple cider donuts because I love donuts and I love apple cider
Just wanted to drop a line and say I made this for my wife last night, I used a Dutch oven instead of a skillet and it turned out great. I was worried about the caramel since that’s not something I’ve made I don’t think but it couldn’t have been easier. Overall I think this is better than an apple pie, wasn’t too sweet or too heavy with all the pie crust.
Claire, thank you so much for this and all your other uploads! I tried it tonight and it was such a success, everyone love it. Whenever I'm looking for a pastry recipe, you are the first name on my search bar. Perfect explanations, I'm yet to make a bad Claire recipe ❤ Thanks a million from 🇧🇷
So, this is in my oven now. I made some baharat-candied walnuts to garnish over the ice cream that I’m super excited about. I always use a variety of apples because I pick all different kinds…also I think it adds to the textural complexity to have more than one type, just my two cents…
I've been binge watching this channel and just any Claire videos in general and this whole episode I had the word steusel stuck in my head, everytime Claire mentioned a crumble topping. So I googled it. The difference between a streusel and a crumble is the flour and sugar ratios and streusel has a chewier texture.
1:20 "And you cannot mess it up too much" My brain instantly: Well you could burn the crisp, or undercook your apples, or just completely forget the ice cream 😅
Burning the sugar and the caramel sauce appears to be the trickiest part. However, Claire describes how to avoid this by starting with part of the sugar, showing what to look for in the color change, and how adding the butter and cream reduce the heat. If I mess it up, it is totally on me. Claire has explained and shown me how to do it correctly. Now, how to translate this into ramekins so I don't eat it all at once. BTW in my house, some cardamom may just "accidentally" be spilled into the topping with the cinnamon.
made this tonight and i will never be making true apple pie ever again. it was so good. also, i’m gluten-free so i subbed the ap flour to bob’s red mill gf ap flour and it turned out amazing ✨
Can't wait to make this!!! I've been making peach crisps all summer and was sad to see them go, but now I'm inspired to carry the tradition into fall with apples! 🍏
If this is helpful to anyone - I had a few vegan friends over and used TJ's "Dairy Free Buttery Spread" and "Vegan Heavy Whipping Cream Alternative" to make this and it turned out impeccably. Can't wait to make it non-vegan as well but no one could tell it was vegan! The crispy-caramel edges on the edge seriously transcend all my previous crisp experiences. Thank you Claire!!
YUP I’m 100% making this. I cannot put into words how excited I am for your upcoming fall recipes. & even the recipes I don’t make, I just love watching your videos so much. They provide me with so much peace and calm from this crazy world.
This is one of the best things I’ve ever made. Amount of effort to deliciousness ratio is insane. I’ve had a lifelong apple crisp recipe that I’ll be throwing out now
You've got it right on with the crumble. It's one of the best part of a crisp so why skimp? I usually double up on it when I use other recipes. Going to make this tomorrow so hopefully it turns out great!
Great episode Claire! Question! Any dessert recipe ideas for 1 for someone with dysphagia (soft foods only, due to trouble swallowing) and also extremely bad reflux so cannot eat acidic food, caffeine or chocolate? But still loves food and is missing her desserts so mad
I can't wait to try this! What kind of glass bowls do you use? I would like to find the same set for my kitchen. We bought a set of All Clad cookware because we noticed you also had a set and we absolutely love it. We love all of your product recommendations. You are the reason we fell in love with Kerrygold products.
Just made this crisp. It was delicious and would definitely make again. I did cheat because I had a jar of caramel in my pantry that needed to get used. I’m sure it’s better with homemade caramel but no one noticed!
Looks great. I do something similar in a six inch cast iron skillet. Just one apple and the topping. Bake it while I am eating dinner so I have a nice hot dessert for afterwards. Thanks for the video
You sound out of breath and tired, please take care, because your recipes are amazing. It's good to see you go from a tiny kitchen to this farm kitchen. Cheers!
I cannot wait to try this! I don’t have a skillet that’s oven-safe, so could I just put everything in a baking dish once finished cooking on the stovetop? (sorry if this is a stupid question)
Absolutely! Thats what i plan on doing too, because i want to bake mine in my countertop convection oven instead of my big oven, and my skillet wont fit in the little oven haha.
Which fall recipes are you most excited to bake this year? Leave a comment and let me know!
@@CSaffitz i’m excited to make plum crisp
Cookies, brioche and quiche!

I made a pumpkin/white chocolate Basque cheesecake, it was a good crowd pleaser.

We grew up with a Cortland apple tree in our yard growing up and we always made apple crisp using those, it was so good!
Cortland is my go-to apple for baking, too!
