Ground beef shouls always be cooked thoroughly. With steak, rare or medium rare is okay as long as its seared, because the inside isn't exposed to the outside. Ground beef is multiple cows in one burger, as well as the beef being mixed to where there is no longer a sealed internal patty, but rather the inside has become mixed with the outsode and introduces major potential for foodborne illness. For me, ground beef: medium well steak: medium rare

American food safety standards say your burgers should be cooked at least medium. Steaks are okay to cook much lighter as only the outside is exposed to bacteria and is burned off when cooking. Do people not get you REALLY shouldn’t eat hamburger meat anywhere near fully cooked…. Steak is fine, bc it’s being burned off. But hamburger meat it ground, so all that bacteria is all inside the meat. That’s why it needs to be fully cooked
