I've a few recipes for curry sauce, but definitely trying this one. If you freeze your curry sauce, try doing it in an ice cube tray and pop out a curry cube or two as needed.

Yes, just yes.. I thought I already knew how to make thrice-cooked chips and curry sauce, but no. Roughing the chips up AFTER they cooled before 2nd cook is such logic but something most chefs do straight after 1st boil, , which then makes them a bit mushy. Nice, yes, very nice. Well done sir.

Another great recipe! I've recently been on a quest to get proper chip shop curry sauce and ended up buying 4 kilo of Dinaclass curry sauce powder (with sultanas) which is apparently what most chippys use. It's lovely but now I want to try this as home made is always better. Thanks Chef!

Dear Teeside may I make a suggestion? if you make every thing as stated and omit the corn starch slurry ,and keep in a bottle in fridge ,then when you want it ,add required amount to pan , make a slurry of 2-1 water and potato starch (far superior than cornflour) warm and add slurry slowly till desired thickness is reached, i do this with with my sweet and sour sauce ! HAPPY DAYS

As a softy southerner I have to say that looks bloody lovely. I think it is well proven you can survive on curry sauce and chips quite happily.
