When I harvest potatoes and find any that have any green on them, I just put them right back in the dirt and let them grow into my next crop. For years I have used the FDA advised way to can potatoes, but I never cared for the texture of them after opening. Then a few years ago, I happened to see a video of someone dry canning potatoes, and I have been dry canning them ever since. And the texture of dry canned potatoes has the flavor and texture of fresh cooked.

This was most of our harvest…. Way too much to save for seed potatoes. I actually tried dry canning and didn’t care for it. Appreciate you watching.
