If there is one dish that has made Bihar world famous, it is Litti Chokha! Litti Chokha is a complete meal in itself, where litti is a stuffed bread and chokha is a brinjal and potato mash.
Traditionally, Litti Chokha is cooked over cow dung cakes. But it can be a little difficult to find them in cities, so I have shared with you today, how you can make Litti Chokha or bati chokha in 3 ways! One way to make litti chokha is of course the traditional way, the 2nd way to make litti chokha is in a pressure cooker, and the 3rd, Litti Chokha can also be made in an appe pan. all 3 ways work well!

Litti Chokha
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 3-4
Ingredients:
For the Litti:
3 cups whole wheat flour
½ tsp salt
3 tbsp ghee
Water as required
For the Stuffing:
1 cup Sattu
½ cup chopped onion
1 tbsp chopped green chilies
1 tbsp chopped ginger
2 tbsp chopped coriander
2 tbsp red chili pickle stuffing
3 tbsp mustard oil
1 tsp chopped garlic
Salt to taste
For the Chokha:
1 large brinjal
7-8 cloves garlic
2 tomatoes
1 large potato, boiled
½ cup chopped onion
1 tbsp chopped green chilies
1 tbsp chopped ginger
2 tbsp chopped coriander
2 tbsp lemon juice
2 tbsp mustard oil
Salt to taste
Method:
Add the salt and ghee to the whole wheat flour and rub well. Add sufficient water to make a soft dough. Do not over knead the dough.
Mix together all the ingredients for the stuffing.
Make cuts in the aubergine and place garlic in the cuts. Brush the aubergine with oil. Roast the aubergine, tomatoes over naked flame till the skin is charred. Peel and mash well add the boiled potatoes and all other ingredients and mix well.
Break lemon sized balls of the dough. Flatten the dough and fill with 2 tbsp stuffing, cover and seal. Cook the prepared littis in a pressure cooker, appe pan or cow dung cakes as shown.
Enjoy with the chokha and green chutney.
