    For reference, I was there the day this was filmed. The line was 3 hours and 15 minutes, and I had a great time that day. I talked to people, drank some Lone Star beer, and took pictures. Met Benji, and had an awesome day. Made friends with the guy in front of me and his family from Chicago.

      Why is it strange? He explains his reasoning. In modern barbecue joints, such as Franklins, there is more of an emphasis on the technique and science in achieving deliberate results and maximizing the good barbecue has to offer, while minimizing the bad.

    Nick is a great man, he is a good presenter who obviously cares about food. highlighting some of the lesser known amazing foods of many states, especially my home state of Texas. Who cares about is past as a skinhead, he has renounced it and apologized. Everyone makes mistakes as a young adult, as we are easily indoctrinated into ideologies and beliefs. He stepped away from it and is now doing great work as a meat eaters spokesman.

    Texas Monthly says the best is Snow's in Lexington, Lee County. The pit boss
    is the 73 year old head custodian at Giddings Middle School, everybody calls her Tootsie.
    They all have full time jobs and ht's why Snow's is only open on Saturday.

    Loved this video. My only quibble with it as a Virginian is that pulled pork has its roots in Virginia even though our Carolinian cousins are better known for it in this day and age. If you ever make it to Williamsburg, VA, I highly recommend Pierce's pit barbecue. Great episode and your passion for good delicious food is very apparent!

      I'm originally from Austin and ya ain't wrong. And pulled pork is so good it needs to be shared! Recently had whole hog bbq in at Rodney Scott's in Charleston SC. Dang. That was a revelation. Got a personal tour of their hog cookers by the man himself. Great guy. Amazing food.

    You don't have to wait in line--- just order ahead and you get to skip the line (remember this for after COVID). Franklin BBQ is the best- if you plan ahead, you don't have to wait forever. There's a line for a reason.

    My opinion on BBQ is that variety is the spice of life. I have not spent time in Austin, but I know in KC, I've yet to have bad BBQ. It's wonderful to try different people's 'Q and experience the differences.
    This all looks incredible to me.

      KC bbq is all covered in a sweet sticky sauce, like it’s trying to hide something. True central Texas beef bbq has no sauce. So you have to get it right.

    As an Austinite on Ironworks - This is a place that the corporate convention center herd goes to on their lunch break as it is across the street. It sux compared to the other Austin BBQ places. La BBQ is great though. Many other great local bbq places could have been visited here instead of Iron works. Styles Switch, Coopers, Blacks, etc... the list is long.

    La Barbecue is my favorite with Franklin's being a close 2nd. I was so happy when La Barbecue opened up near my vacation loft. I can't leave Austin until I get some food from there. You can't go wrong with either place. Wish we had something similar to that up in New York City. Virgil's, Dinosaur, Hometown, Dallas, and other BBQ places in Manhattan/Brooklyn can't compare. If you're looking for a vacation spot, just going to Austin for the BBQ is worth it to me. Definitely check it out.

      Well, if you choose House BBQ or Ironworks instead of Franklin or LaBarbeque, you made a mistake. Nobody goes to Franklin all the time but it's world class. Now, LaBarbeque is fantastic but will likely have an hour wait.

    Of course there are other great bbq places. But Franklin's is the King of bbq. Plain and Simple. Been to a lot of places and this one is hands down the best. And for all complaining about the long line/wait, that's the fun part! And if you don't want to wait, then you don't have to eat there.

    I was in Austin in January. I went to the Ironworks as well as Rudy's , which is a chain across the region. I went to the Saltlick and a couple others in Lockhart.

      @@mmholling87 For atmosphere the Saltlick would be hard to beat. There was a fire/smoke pit near where you enter and above the wood are these sausages absorbing the smoke. There was in Lockhart, in the town centre, one where the pitmaster was really friendly and let me get up close and then took me for a tour.

    Burnt ends come from the point. The flat doesn't have enough fat to take on any additional cooking. The flat is best for slices of lean brisket.

    The sausage of central Texas is beef based. However there is a lot of pork sausage in North and East Texas. Each region has its own spin and influences.

    I'm a 4th gen Texan and, I would be honored to eat Texas BBQ at just about any BBQ Joint in the State. And just about have. 90% are just as good as Franklins. It's real easy to tell. How crowded are they at lunch and dinner. How long have they been in business. The more the place looks like the pits haven't been cleaned since Carter was President the better. Also I have never eaten at a Black BBQ joint that wasn't to die for. In the last 20 years I've eaten at two joints where I would not go back. Both were less than a year old. If I lived anywhere but Texas, I'd just be a Vegan.

    Austins best bbq is sam bbq in east austin.martin luther king and mickjager used to adore that spot
