    I'm so happy you've found a healthy diet that suits you. There's so much information out there, most of it well meaning but not necessarily good for everybody. It takes trial and error and professional back up to get well again. Thanks for sharing, I'm sure your experience will motivate a lot of us to keep sriving towards better health in our 60ies and even more!

    I always wondered about how you could eat the way you were eating. I've been on Keto since the beginning of November and it's fabulous. I've lost about 25 lbs and feel fabulous! I also do the intermittent fasting, my first meal of the day is about 12:30 or 1:00 then nothing after my dinner at about 7:00 till morning. Absolutely amazing that I don't get hungry but that's because of all the good fat that you're using for your salads and cooking. Enough, good luck, your counter looks like mine now.

    I stopped eating grains, sugar, high starchy foods and I have never felt better. I do not have the joint pains, and it has healed inflammation in my body. It was a good choice for me, and I see for you also. Glad to see you have had success. I too have to steam some of the vegetables to digest them.

    Hi Susan! I have been following you for years. I too have problems w/ grains, beans and night shades. It sounds you are following “ The Plant Paradox Diet or Dr. Gundry diet. It has worked for me and cleared up a lot of my stomach, headaches and skin issues. Good luck and it sounds like you are on your way. Take care and see you in your next video.

      I am reading that book and learning why certain foods no longer work for me. They are actually harming me!

    I found I cannot eat seeds, nuts or cranberries because I just found out I have Diverticulosis (bulging pockets in the intestines - comes with age) and those things get "stuck" in the pockets and cause awful problems that can lead to Diverticulitis. Now I eat Salad, greens, beans, salmon and vegetables. Fruit also and crusty bread with Olive oil and seasoning for dipping. Works very well.

      My weight has remained at about 143 pounds for more than ten years. My lab reports are better now than when I was forty. I eat more vegetables now than anything else.

    Good info. It would be hard for me to eat this way. My husband wouldn't appreciate this type of diet. More power to you and your husband for eating this way.

    Sounds like Keto except for the "tubers". I follow the Keto lifestyle and have never felt better. No junk food. Lost 31lbs and I will be 70 in July!

    I eat a fresh salad with very little meat -you only need 3% protein, everyday and I love fruits. I will eat apples, oranges and peaches are my favorite! I am curious how you cook or use red cabbage? Could you share how you eat it? I would love to give it a try!

      Mostly I steam cabbage or shred it to mix with salad.

      I purchased the salmon I showed at my local health food store. I have also found it in the frozen fish section of my grocery store's meat department.

      I have always had problems with cucumbers so I try not to eat them whole. In the summer I will do as you say and remove the skins and seeds, which makes them neutral. I love the taste of fresh summer cucumber!

    Great video. So much information. Looks like a great diet, but I can’t eat sweet potatoes. I have gained a few pounds so I’m glad I found this video.

    Try parsnips, a British staple, taste like cross b/tw carrots and sweet potatoes. They're lovely!

    It sounds like you are having a celiac reaction. This happens when your body has a autoimmune reaction to gluten in the grains you we're eating. I have celiac sprue so I can only have grains that contain no gluten and are produced in a facility that doesn't manufacture gluten containing grains. You can buy gluten-free and safely manufactured by Bob Red Mill in your local grocery store now. I pray this helps you Susan. You have helped me so much!

    I watched your earlier video on diet, and thought it included WAY too many grains. Intermittent fasting is very healing. I prefer plant based. I haven’t eaten meat in years, and haven’t eaten salmon since seeing a video of worms in the package of a well known food store chain. Keeping color, texture and variety in diet is key. And NO sugar! Great video.

      Medjool dates and organic dark chocolate with coconut butter is one of my favorites, but I don't have it every day.

    Most of those vegetables would not agree with me as they are too gassy, but I’m glad they work for you

    Ah so you like Grün Kohl (kale) my favorite too. Our diets look identical. I started on keto and now doing vegan keto except for fish.

    Perhaps your previous foods were derived from another original source who used different pesticides, or washes, handling practices, something that threw your system off. Happy you have found a way to adapt to your needs.

    Check out Dr Gundry’s book The Plant Paradox. He explains why you’re having issues with the foods you mention.

      I have been reading one of his books as well as several by other Physicians and Nutrition Experts. So far everything he mentions has also been a problem for me. The rash was what put me over the edge. I hate prescriptions, so I decided to solve the mystery and remove problematic foods.

      SusanAfter60 I have issues with those foods too. The Plant Paradox diet has changed my life. Supplements and the Plant Paradox diet have almost completely eliminated my autoimmune symptoms.

    I've found as I get older..its not the foods,,its the chemicals they are grown in and with. That includes wheat and beans cashews ect...organic is all I can eat without getting adverse reactions from them, all whole foods' unless grown without pesticides ect ect..

      Only when it is in season and small amounts. Blueberries are a favorite.

    Susan, I have been following you for years and I greatly admire and respect you. But as a health care professional I really hope you consulted a doctor and didn't "research" using Dr Google. Rashes, headaches and achy joints can be caused by a host of things NOT related to food. Also, there is no such thing as "detoxing" using food. You have a liver, kidneys, lungs, stomach and colon to do that.

      If you continue to eat the foods you can not tolerate, it will significantly affect your organs' ability to function as they should. I have consulted with specialists to determine what my issues were and what I needed to do to correct them. I am feeling 100% now. Thank you.
