Very enjoyable episode - especially when you explain why you're doing certain things and show how to build them. Too often in technical LPs people will say "I built x here to help with y" but won't show x or how they built it. Hope to see more like this.
Nice! Btw, I would also shut off the clock used in smart lock if the selected option is not smart lock. Just need to replace the stone brick by the piston 18:25 with slime, and put a redstone block below that, and you can use that signal to shut off the comparator at 15:15

Didn't know about the cake trick. My favorite way right now is to have 2 droppers facing each other, put one item in one, then to decrement, send a pulse to one, then 2 ticks later send a pulse to the other, reading out from the second dropper using a comparator. That way you get a monostable as well, so you can easily trigger the decrement using a repeater clock for instance, thus more variable timing. Might make a video on these clocks.

Oreo Lamp depending on ping, throwing an enderpearl while jumping leads to perceived lack of velocity when throwing, but what is actually happening is that the enderpearl is being thrown server side at a point in time when you are on the ground between two jumps, even though you click at the peak of the jump

Its funny that we actually build the exact same Castle on our server just for Funs. I already noticed it in the server tour but wasnt 100% sure. We still have no idea what farm we gonna build in it.
