Tips on making big batches. I soft boil, now with an egg steamer, 14 eggs, and my wife wants an increase to 28 eggs. Then you don't need to clean the steamer twice. You can peel a soft-boiled egg just like a hard-boiled egg and keep your peeled eggs in the fridge. I throw 2 into my oatmeal every morning. You can also re-heat in any hot water. The taste of a warm, soft-boiled egg yolk is divine! My wife also has me go outside and grill a ton of meat all at one time. I just did it for two hours: first duck, then lamb, last pork. All I'm doing is searing in the juices: the duck had four sides to sear. I've told her we need to eat modest portions of meat, so we share one pork chop. The very last pork chop I cut up into small pieces and thoroughly cook. The rest is frozen, seared on the outside, raw on the inside. For a meal, just put one in the steamer. We get barbecued, juicy meat. The trick with meat is not to overcook. There are some real secrets to great cooking and saving time, and they're not difficult to do.
Lentils are not usual in Indonesia. But we have huge variations of legume nuts and fresh vegetables. I love some of them raw, and sometimes, short-time steamed.
I would love to see a granola video! I'm curious about your knowledge and views on seed oils. It seems that oils such as vegetable, canola, peanut, sunflower, safflower oils are inflammatory, but in my current research, are in so, so many processed foods, even the "healthy" stuff.
How coincidental- I watched this as I was prepping a whole food meal for my family. Like you, I have little children and like to include as much nutrition as I can. This is a staple for us: Veg/Meatballs. I use my food processor to cut up really fine carrot, silverbeet, mushroom, sweet potato, broccoli, garlic.. then add it to the minced meat. I substitute some of the breadcrumbs with flax meal for added omega 3, and use eggs from our free range chickens. Mix it all with some seasonings I make & then bake in the oven. It’s such a fantastic whole meal - protein, lots of vegetables, goodness from the eggs and the flax, and carbs from the breadcrumbs. It’s so nutritious and little children can easily pick them up. I don’t eat pasta or rice because it spikes my sugar and I can’t eat brassicas. I can eat Broccoli Rabe until it’s coming out of my eyeballs though. What do you think about freezing prepared vegetable dishes( either store bought or home grown) . That would be an easy way to have something quick easy and healthy for people with busy lives. Of course you would have to put some time aside every now and again but the benefits are huge!!

My wife and I have recently left the city to live in the National Forest. We’ve built our home and are now adding a dedicated canning/processing room. If u could wish what accessory appliances (store-bought/homemade) would u have…in addition to the conventional stuff. ie grinding mill food/fruit dehydrator etc. Including these items and any others, please be specific with styles/brands etc if u can. Just to kind of confirm what you said about bread, I used to live in Germany, and was married to a German. We came to the U.S. to visit my family for about 10 days, and ate similar foods to what we would have eaten in Germany. During that time, my wife, to both of our dismay gained quite a bit of weight, and lost it again when we got back. The main difference, that we could tell, was the quality of the bread. We were amazed at how much of a difference that made.

Breakfast in normal household in Indonesia varies like crazy! From freshly cooked lunch made from scratch for lunch as breakfast, to street food like chicken noodle and chicken porridge! Think about fried rice (nasi goreng) as Indonesian #1 breakfast staple.
I LOVE more savory breakfasts like that. I seriously could (and sometimes do) eat beans and greens for breakfast. I loved the breakfasts I had in Cambodia, Singapore and Thailand. One day I will get to Indonesia to try nasi goreng!
I heard a statement recently that a person would have to eat 8 oranges to get the same nutrition as eating one orange 50 or 100 years ago as our soils have been over used and depleted. Not just oranges but how about all vegetables or fruits we purchase at the store. Many Thanks!

I remember back 30+ yrs ago working in a major brand food processing plant and seeing all the "stuff" they put into the foods they were making...totally disgusted me and I don't eat ANY of those products to this day! If the public only knew or got to see it, I'm sure a lot of them wouldn't put it in their bodies either...
NICOLE’S FIVE PRINCIPLES OF A HEALTHFUL DIET - I. Eat as many whole foods as you can and as few processed foods as you can. II. When you do eat processed foods the ingredient list should be short and full of recognizable ingredients. III. Eat homemade foods as much as possible. IV. Treats are allowed, but make sure that they fit into the previous three rules. V. Eat mostly vegetarian (60-85% of total dietary intake on average).
Hey Nicole, another great video. I love your attitude to food, although I prefer raw muesli to granola. I add some extra nuts and dried fruit, and then some sliced fresh banana. That's my go-to M-F breakfast, and then I like to mix it up a bit on weekends - sometimes I'll do bacon and eggs, sometimes fruit and yoghurt, sometimes I'll make pancakes or muffins. I also like to combine eggs and leftover/frozen vegetables in a frittata. Very quick and easy. But I have a couple of questions for your 'Ask me anything' episode. I'm interested to know a little more about your education/work experience before starting TFTV. And did any of that help you prepare for running your own online video business, or was that something completely new to you when you started? And I might throw in a request for a future HDIG episode while I'm here. I'd like to see how peanuts (I think you call them ground nuts over there) are grown and processed. Thanks!

Hi Nicole! A huge fan here from India 🙏 I grew in a family with the same values as yours where my parents always encouraged home made n local food. My question is : should I buy something with a few recognisable ingredients n some preservatives n Emulsifiers, n how do they impact us? For eg. I sometimes hesitate to buy a simple bottled lemonade coz apart from lemon, sugar n water it has preservatives n emulsifiers in it , what should I do?
Were your parents into nutrition? My grandmother would make homemade granola. My mother hated it 🤣 she's in her 60s now and still complains about how awful it was. I'm sure yours is better though ;) Also, I have a chocolate recommendation. Guittard beyond sugar santé 72% I know coconut sugar is still sugar, but it's less sweet and the chocolate itself is so good. I get it from "world wide chocolate"

I sprout mungbean and I’m going to make flat bread using some organic spelt flour and spices and sesame seeds, black seed and a special seed which. Do you make your own pasta Nicole? Another great vlog and fully agree with you and homecooking. You look at what is in most supermarkets and think whar utter rubbish.
First...where there's a WILL, there's a WAY. You referenced condiments...some of the best 'condiments' a person can use which are super healthy is including herbs and spices either while cooking or while eating. I always have Bragg's 24 Herbs & Spices on hand and use in all stages of whole food prep or eating. I tend to lean towards Ayurvedic spice(s) use, especially while cooking. If a person wants some extra 'zing' with anything they eat, try Berbere, an Ethiopian spice blend. I buy Berbere by the pound because I use Berbere on just about everything from omelette's to fresh salads. Herbs and spices are powerhouse nutrient sources - do the research. Enough said except to note I receive no compensation of any form for mentioning Bragg's. Enjoyed this video!
Lovely video as always! Living in Spain, I also find American recipes waaay too sugary (I even saw a buttercream recipe with 6 cups of powdered sugar). My question- what was your favourite HDIG to shoot? (My favourite was the Olive Oil one, my grandpa had an olive grove in La Mancha!) Oh, and a small tip- you should try to make a Spanish Omelette someday! Very easy and delicious (add a small salad and you have a quick and healthy meal)! Also, I would love to get a Vego Bed! Unfortunately, the shipping was too expensive! Do you know of any alternatives in Europe? They just look so durable and pretty!

Hi Nicole, your sourdough looks amazing. What type of wheat grain do you use for your bread? And do you use all wholemeal or some strong white? I've been milling our own flour for a good while now but while the taste of all the baked goods is amazing the breads in particular tend to be quite dense. Which the husband doesn't like & won't eat 😂 We're in Ireland so the grain is quite low in gluten, so just wanted to pick your brain on the above. Thanks a mil, Jen
Hi Jen! The white flour I use is generally King Arthur which has 12-13% gluten. I always mix in whole grain -- usually a combo of Kamut, rye, einkorn or emmer. These are all low gluten, but high on flavor. That's why some strong white bread flour will help add strength.

I love your video, but can you make one that's a little more accessible things for those who can't afford things such as grinding mills and the whole grains required to grind themselves, or top notch chocolate, etc...I would really appreciate it. I recommend buying whole wheat flour -- it's the next best thing to grinding your own. Don't let it sit around too long though because it goes stale quicker than white flour. And don't feel pressured that you have to buy top-notch chocolate, but dark chocolate of any kind is better for you than milk chocolate (less of a sugar spike, more of the good antioxidants).
It's just getting going! I'll be posting some shorts soon. My first round of lettuce should be ready to pick in a week or two, and I'm hardening off my transplants just this week. Kale chips are delicious! So glad your girls enjoyed them.

For your AMA, I have to ask, are you a Delco gal? 😂 I've seen you have a bunch of videos in and around my old stomping grounds like Longwood Gardens, Linville Orchard (I used to be a life guard at one of their pools). Also I'd love to see more of these types of videos. Especially with regards too what you do with all of your garden harvest. Having said that, I truly appreciate how you travel and dig into the nuts and bolts of how things grow and their histories.

As a kid from 5th grade until moved out ,I'm th one that made,oats,cream wheat, pancakes, French toast anything but cereal. HAVE REQUESTED my wife to try making sourdough but she doesn't cook what she doesn't eat. Everyone who works harder does has more strength to continue but people gets in a rut.
Yes, it's so so easy to get in a rut. I feel it too sometimes. Fortunately I really enjoy cooking and I have a great collection of cookbooks that I dip into when I feel the need for inspiration.

We haven't felt the impact here yet on wheat. I'm sure the ripple effect will get to us eventually. Since I'm not a farmer, I dont have to worry about the cost of fertilizer, which I'm sure will increase (if it hasn't already). I just add a layer of fresh compost each year in my no-dig veg patch. Free from an organic mushroom farm nearby!
It sounds like you cook like my mother! Food for 10 (or more) every day, while having a strong aversion to 'store-bought prepared foods', one learns lots of time/effort saving things. If you have the time and tools to cook it is possible to eat quite well on a surprisingly low budget.

Probably a common question…. But how to use the sourdough starter to make a good everyday loaf bread that fits in toaster? I would like to see all kinds of videos of you making different favorite recipes.
Tofu can take on whatever flavors you cook it with. But to me, it is also about the texture. I like sauteing small cubes of firm tofu with oil, Thai soy sauce, and ginger. That way it is crispy and flavorful. You can also blend silken tofu and use it in dishes that call for cheese. It won't replace all of it, but it will make the dish creamier. I have also put silken tofu in brownies. It is very versatile.
How about a “transition” plan, moving from not-so-healthy to healthier. Using canned (or frozen?) veggies, bread available in a bakery (if not on the shelf). Basic stuff like potatoes, carrots, apples, pears…. Baby steps…
Yes, Mark, exactly! I hoped this video only provides inspiration. Adding more whole foods -- canned, frozen, fresh -- is the way to go. And bread made fresh from a bakery is certainly the way to go over the packaged.
I have to say I should really exercise more! But the diet I describe is the primary way I feed my body to be healthy. I do an occasional workout (sit-ups, push-ups, etc) but to be honest, I should be more regular with my workouts.
I love those Talenti containers. They’re great for freezing things made with tomatoes; they don’t stain. But don’t put them in the microwave they melt, ask me how I know 😬😳
100 years ago sourdough starter was never discarded, grain that was stone ground was 1000 times more nutritious than steel ground, and too precious to throw away discard is to make sourdough more like bakers yiest, the best bread come from dough that takes 24 hours to rise, not 1 hour. I see recipes that tell you to refrigerate the dough to slow down fermentation. This is stupid. In the Bible, they used wooden bowls to make bread, and the sourdough yiest was impregnated into the voids in the wood structure. They never washed the bowls because that would kill the yiest.

In 2nd grade, we toured the Kelloggs factory in Michigan and got to take home a box of our choice, and thus I had Froot Loops for the first time in my life. It was gawd awful. The poor, poor children whose mothers bought them that rubbish to eat...

Curious about your view on fats for cooking at fat temperatures? Clarified butter? Ground nut oil? Processed vegetable oils? Lard?
And is it OK to reuse oils or fats ie the left over bacon fat from the pan or oil that was used to deep fry?

We came to the U.S. to visit my family for about 10 days, and ate similar foods to what we would have eaten in Germany. During that time, my wife, to both of our dismay gained quite a bit of weight, and lost it again when we got back. The main difference, that we could tell, was the quality of the bread. We were amazed at how much of a difference that made.

Eggs are probably the best breakfast you can eat
Breakfast in normal household in Indonesia varies like crazy! From freshly cooked lunch made from scratch for lunch as breakfast, to street food like chicken noodle and chicken porridge! Think about fried rice (nasi goreng) as Indonesian #1 breakfast staple.
I LOVE more savory breakfasts like that. I seriously could (and sometimes do) eat beans and greens for breakfast. I loved the breakfasts I had in Cambodia, Singapore and Thailand. One day I will get to Indonesia to try nasi goreng!
I heard a statement recently that a person would have to eat 8 oranges to get the same nutrition as eating one orange 50 or 100 years ago as our soils have been over used and depleted. Not just oranges but how about all vegetables or fruits we purchase at the store. Many Thanks!

Hey Nicole, another great video. I love your attitude to food, although I prefer raw muesli to granola. I add some extra nuts and dried fruit, and then some sliced fresh banana. That's my go-to M-F breakfast, and then I like to mix it up a bit on weekends - sometimes I'll do bacon and eggs, sometimes fruit and yoghurt, sometimes I'll make pancakes or muffins. I also like to combine eggs and leftover/frozen vegetables in a frittata. Very quick and easy. But I have a couple of questions for your 'Ask me anything' episode. I'm interested to know a little more about your education/work experience before starting TFTV. And did any of that help you prepare for running your own online video business, or was that something completely new to you when you started? And I might throw in a request for a future HDIG episode while I'm here. I'd like to see how peanuts (I think you call them ground nuts over there) are grown and processed. Thanks!

I sprout mungbean and I’m going to make flat bread using some organic spelt flour and spices and sesame seeds, black seed and a special seed which. First...where there's a WILL, there's a WAY. You referenced condiments...some of the best 'condiments' a person can use which are super healthy is including herbs and spices either while cooking or while eating. I always have Bragg's 24 Herbs & Spices on hand and use in all stages of whole food prep or eating. I tend to lean towards Ayurvedic spice(s) use, especially while cooking. If a person wants some extra 'zing' with anything they eat, try Berbere, an Ethiopian spice blend. I buy Berbere by the pound because I use Berbere on just about everything from omelette's to fresh salads. Herbs and spices are powerhouse nutrient sources - do the research. Enough said except to note I receive no compensation of any form for mentioning Bragg's. Enjoyed this video!

Hi Nicole, your sourdough looks amazing. What type of wheat grain do you use for your bread? And do you use all wholemeal or some strong white? I've been milling our own flour for a good while now but while the taste of all the baked goods is amazing the breads in particular tend to be quite dense. Which the husband doesn't like & won't eat 😂 We're in Ireland so the grain is quite low in gluten, so just wanted to pick your brain on the above. Thanks a mil, Jen
Hi Jen! The white flour I use is generally King Arthur which has 12-13% gluten. I always mix in whole grain -- usually a combo of Kamut, rye, einkorn or emmer. These are all low gluten, but high on flavor. That's why some strong white bread flour will help add strength.

I love your video, but can you make one that's a little more accessible things for those who can't afford things such as grinding mills and the whole grains required to grind themselves, or top notch chocolate, etc...I would really appreciate it. I recommend buying whole wheat flour -- it's the next best thing to grinding your own. Don't let it sit around too long though because it goes stale quicker than white flour. And don't feel pressured that you have to buy top-notch chocolate, but dark chocolate of any kind is better for you than milk chocolate (less of a sugar spike, more of the good antioxidants).
How is your veggie garden doing? I grew lots of kale and my girls made kale chips.
It's just getting going! I'll be posting some shorts soon. My first round of lettuce should be ready to pick in a week or two, and I'm hardening off my transplants just this week. Kale chips are delicious! So glad your girls enjoyed them.

As a kid from 5th grade until moved out ,I'm th one that made,oats,cream wheat, pancakes, French toast anything but cereal.

Yes, it's so so easy to get in a rut. I feel it too sometimes. Fortunately I really enjoy cooking and I have a great collection of cookbooks that I dip into when I feel the need for inspiration.

We haven't felt the impact here yet on wheat. I'm sure the ripple effect will get to us eventually. Since I'm not a farmer, I dont have to worry about the cost of fertilizer, which I'm sure will increase (if it hasn't already). I just add a layer of fresh compost each year in my no-dig veg patch. Free from an organic mushroom farm nearby!
It sounds like you cook like my mother! Food for 10 (or more) every day, while having a strong aversion to 'store-bought prepared foods', one learns lots of time/effort saving things. If you have the time and tools to cook it is possible to eat quite well on a surprisingly low budget.

How do you flavor a boring tofu sandwich or spice up a tofu in general to make it taste better?
Tofu can take on whatever flavors you cook it with. But to me, it is also about the texture. I like sauteing small cubes of firm tofu with oil, Thai soy sauce, and ginger. That way it is crispy and flavorful.
You can also blend silken tofu and use it in dishes that call for cheese. It won't replace all of it, but it will make the dish creamier. I have also put silken tofu in brownies. It is very versatile.
How about a “transition” plan, moving from not-so-healthy to healthier. Using canned (or frozen?) veggies, bread available in a bakery (if not on the shelf). Basic stuff like potatoes, carrots, apples, pears…. Baby steps…
Yes, Mark, exactly! I hoped this video only provides inspiration. Adding more whole foods -- canned, frozen, fresh -- is the way to go. And bread made fresh from a bakery is certainly the way to go over the packaged.

I have to say I should really exercise more! But the diet I describe is the primary way I feed my body to be healthy. I do an occasional workout (sit-ups, push-ups, etc) but to be honest, I should be more regular with my workouts.

100 years ago sourdough starter was never discarded, grain that was stone ground was 1000 times more nutritious than steel ground, and too precious to throw away discard is to make sourdough more like bakers yiest, the best bread come from dough that takes 24 hours to rise, not 1 hour.
I see recipes that tell you to refrigerate the dough to slow down fermentation. This is stupid.
In the Bible, they used wooden bowls to make bread, and the sourdough yiest was impregnated into the voids in the wood structure. They never washed the bowls because that would kill the yiest.
