    Tortillas:
    Makes 16-20
    8 Eggs
    1 Tbsp Coconut Oil
    1/4 Cup Water
    1 Cup Arrowroot Flour or Tapioca Starch
    1 Tbsp Coconut Flour
    1 Tsp Salt
    Whisk all ingredients together. Ladle onto a ungreased and preheated small frying pan or cast iron pan. Flip after roughly 1 minute until the tortilla can be easily flipped. Cook second side for an additional 30 sec.-1 minute.
    Egg/Mozzarella Pizza
    Crust:
    4 Eggs
    1 Cup Shredded or Chopped Mozzarella
    Whisk together eggs and cheese. Pour onto a preheated 12" cast iron pan. Bake at 400 for 10 min. Remove and top as desired. Cook at 450 for 5-10 minutes until cheese is lightly browned and bubbly.

    After trying many flour tortilla recipes this is the one that has been working great: 750gr flour, 2/3 cup avocado oil, 1 Tbsp salt, 1 tsp baking powder, semi-hot water as needed, usually about 1-1/4 to 1-1/2 cups. First in a bowl I put in flour, baking powder and salt, and whisk. Next in a large enough coffee cup I put 1/2 cup water and heat in microwave till semi-hot, I take it out and pour in the 2/3 cup oil. I pour all that into the flour to start mixing together with my hands. I gradually add more semi-hot water as needed. You want a sticky dough, kind of like when you make biscuits but a bit more sticky. When you knead it, it should become a smooth soft dough. If you see some bubbles that is a good sign its a good dough. Wrap with cling wrap and let it sit an hour so it can have good elasticity. When the hour passes you can use it. When you roll your dough balls out try not to use a lot of flour on your surface, just a bit as needed. Excess flour makes a dry stiff tortilla. It helps to flour your rolling pin. This recipe makes about 15 tortillas. Hope this helps.

    i have a great recipe of tortilla for you that i make on regular basis. it is a gluten-free tortilla and the main ingredient is: buckwheat flour.
    the main concept: X cup of buckwheat flour, X spoon of rice flour (it gives strength to the crepe/tortilla) and X+1 cups of water.
    when I make it I usually make amount of 3 cups of buckwheat flour, add 3 spoons of rice flour. then i mix the dry ingredients. then I add four cups of water (3+1) and mix it. don't pour all the water at once because it will make a lot of lumps you don't want. so add each time one cup of water, mix until it integrate with the mixture, and then add another cup, and so on until you add all the water. the result texture should be like really liquid tahini sauce, and about the same color (really light).
    then I warm up a pan without any oil (the pan needs to be really hot. I don't think it will work with your iron cast skillet because you said you must oil it, but try in a regular non stick pan). then pour small amount each time (like half ladle or so) and make a thin crepe. you can use both green or roasted buckwheat flour. its really tasty and goes great with both sweet or salty additions :)
