- Kaddu ki khatti mithi sabzi is a delightful North Indian dish made from pumpkin (kaddu) cooked in a tangy and sweet gravy. Ingredients quantity
Oil 2 tbsp
Asafoetida 1 tsp
Cumin seeds 1 tsp
Onion seeds ¼ tsp
Fenugreek seeds ¼ tsp
Fennel seeds ¼ tsp
Mustard seeds ¼ tsp
Ginger chopped 1 tbsp
Green chilli chopped 3-4 no
Pumpkin (cut into cubes) 1 cup
Salt to taste
Coriander powder 1 tsp
Red chilli powder 1 tsp
Turmeric powder ¼ tsp
Dry red chilli 3 no
Tamarind paste 3 tbsp
Jaggrey powder 2 tbsp
Water as required
Jaggrey powder 1 tbsp
Water as required
Fresh coriander chopped 1 tbsp
Coriander chopped for garnish
Method
1.Take a kadai on medium flame and heat oil, add Asafoetida, cumin
seeds, onion seeds, fenugreek seeds, fennel seeds and mustard seeds
let them splutter.
2.Add chopped ginger and chopped green chilli Saute until turn golden
brown.
3.Now add pumpkin and salt mix well.
4.Add coriander powder, red chilli powder, turmeric powder and dry red
chilli mix well.
5.Now cover the lid and cook for 10 minutes until the pumpkin becomes
tender.
6.Add tamarind paste, jaggrey powder and some water mashed well.
7.Now add some jaggrey powder and some water mix well.
8.Once the pumpkin is cooked, sprinkle chopped coriander and mix gently.
9.Now side out in serving bowl garnish with fresh coriander leaves and serve hot with roti or rice.

This comes close to Bengal's " kumror chhakka"( diced pumpkin) along with paanch phoron( whole spices which Harpal added separately, we bongs keep this premixed as paanch phoron in our kitchen.) We also add pre boiled lal chana to our kumror chhakka. This goes well with our maida luchi. We don't add imli water but add sugar n hing alright.
