I just made this and it's delicious! I didn't have celery and bell pepper on hand so I just used the lonely potato in my fridge. It was still so good. The potatoes actually soaked up the cajun cream sauce so it was so flavorful. One for the books, definitely. My housemate said the dish made him feel like he was eating at a restaurant

I make a big batch of holy trinity up at once and freeze it. Lasts well for about 6 months, but 3 is better. It saves having to chop every time you need some.

Actually, it means cream with a fat content around 30 percent. You can use lighter such as half and half but it won't be as creamy. Hope this helps.
