But it's when you come to Italy, especially Pescara and south that you encounter the most amazing pecorino, a more fresh and not hard cheese, that it way tops even Reggiano Parmigiano. I just made it. Super easy to make. I also switched to onion instead of garlic and cut a large burrata onto the top before the oven. Delicious!!!!!! First time with riccotta gnocci instead of store bought potato gnocci. Truly magnificient. OH, for the sauce I used Cento Passatta. Very nice and thick.

I love your videos and the italian cuisine for being so simple and easy, yet so flavourful once you know how to make it and don't overdo some stuff as many people tend to do. And it's nice to see how many in common have cuisines in each country when it comes to those simple dishes. Gnocchi is very close to my heart as we have something similar in my country, we just serve it the different way usually, but I love getting inspired with italian cuisine since it's less heavy (i always loves pecorino but thanks to you I add it wherever I can now, I love it so much, it's just a shame it isn't cheaper here :P). Also love how you mention regions when you talk about those dishes. Would be cool to see a video where you comment different regions or towns and cities byt the dishes they specialize in, especially those less popular. We should not limit ourselves to presenting only "standard" dishes that they are already well known abroad, but also devote ourselves to the many specialties that even for us Italians, going around Italy, we discover something new every time. From region to region, from city to city and even from family to family. I am glad you visited my area. I live here in Germany and I just come from the area that you visited, just from that region. PS: I hope you also visited the beautiful Amalfi coast (Costiera Amalfitana) in that area, with wonderful places like Amalfi, Positano, etc.

uh vincè this dish reminded me a recipe my mamma always makes, so good, i think she calls it "pasta al tegame". grazie, can't be more generic. it's basically big thick pasta like rigatoni, in a very quickly cooked tomato sauce made with good peeled canned tomatoes (pelati you know what i mean), only onion, generous amount of basil, black pepper and mozzarella. it goes surprisingly well with tabasco sauce (big fans in my family). then you can bake the leftovers and make pasta al forno, for dinner or the day after, it's so so good. ever heard of anything like that? my mom always used books from the 50 - 60s, i'll need to snatch a couple of those and check them out. i'm sure the recipe of my favourite tomato and onions chicken is there.

You should roll each of them on the table with two fingers to make a shell or boat shape. The sauce sticks inside better. That's how it's done in Calabria.

I'm glad that you were able to enjoy fresh gnocchi on a regular basis. It's not always easy to find fresh gnocchi, especially in smaller towns and cities. But if you're lucky enough to have a local grocery store that sells it, be sure to stock up!
Yummy creamy stringy with the cheese, then the pillowy texture of the gnocchi, and the freshness of the tomato, it is a combination that looks so good one has to try it. Simple dish with a complexity that would match any sophisticated dish. I got to make this but the burrata is hard to come by where I live. And unfortunately even a dry ricotta is hard to find you have to let what you can get drain of moisture over night. But I due believe it is a possibility to make. I enjoy the tang of the pecorino cheese over parmesan cheese, but in a pinch the parmesan works sometimes, I so use a little grated Asiago mixed with the parmesan. I believe this dish is adaptable to met what you can get you hands on at the time and your location. But it is the freshness of the lightly cooked tomatoes that bring it all together to keep it bright and lively.

Recipe looks great, although I have tried 2 versions of ricotta gnocchi (with whole egg, and with just the yolk) and I found that the "just yolk" version turned out a lot better. (lighter, fluffier)

One question: what is a good fat percentage for the ricotta cheese, in Finland there's the store brand ricotta with around 6% fat (made in Italy) and a Biraghi Gran Ricotta super cremosa (also made in Italy), which has the fat percentage 13%. What is the fat percentage of the everyday ricotta you use in your recipes and above all: does it make a difference? I used the Biraghi ricotta for this recipe and needed a bit more flour for the gnocchi as a result of a more creamy and thus "wet" ricotta cheese.

Well this is definitely happening. Would it work with homemade cheat "ricotta" where you heat the milk and add vinegar then strain? Where I am there's not always ricotta at the conveniently close shops, but always have lots of milk.
Yes, you can use homemade ricotta made with vinegar and milk in gnocchi alla sorrentina. It will not be exactly the same as using store-bought ricotta, but it will still be delicious. The homemade ricotta may be a bit more tart than store-bought ricotta, so you may want to adjust the amount of salt

Amazing! Will try it! In eastern former republics of USSR we have a dish called "lazy vareniki (or pierogies)", 'lazy' because there's no staffing like normally for the pierogies. The recipe of your ricotta gnocchi remembers me the recipe of this dish: all-purpose flour, tvorog (cow cottage cheese but not so moist like cottage cheese), eggs, salt and sugar. Mixing, rolling small "sausages" and cutting diagonally into pieces, but bigger than your gnocchi. We keep them frozen, to cook boil them for 2-3 minutes and serve with melted butter. A fast breakfast dish 🙂 . I have 3 portions stacked in my fridge, will tag you on Instagram with photo later, so you can see. So, I would like to make an experiment and instead of salt add some pecorino in my "lazy vareniki', I think it will be tasty ;-)

Regional dishes in the various areas of Italy never die ! The problem is only that abroad people know little about many of our regional specialties. People usually know more about the usual standard dishes. In fact, it often happens that there are tourists who, when they arrive in Italy, wherever they are, almost always order the same dishes that they have in their minds. Not knowing the various local products and specialties that are on the menu.
I appreciate both, but I have a soft spot for ricotta gnocchi. Their light and fluffy texture combined with the creamy ricotta flavor make them irresistible. Of course, it ultimately comes down to personal preference, and I enjoy creating and sharing recipes with both types of gnocchi for everyone to enjoy! 🍽️👨🍳😊
I've made this dish several times before. It saved my first frozen potato gnocchi that fell apart in boiling water (I didn't have a good technique for figuring out the amount of flour yet, so I tried to make gnocchi and cook a little bit of them... fresh where amazing but the frozen one just fell apart). By baking them Sorrento style (adding the sauce halfway through cooking because the gnocchi in that case were very fragile) the oven made those gnocchi more resistant and at that point they were delicious to eat. I still have to make ricotta gnocchi... and since right now I know how to get raw milk I just have to make more cheese XD (both mozzarella and ricotta). PS. Yesterday I made some greek yogurt and I used it with some pesto... it was amazing I think you should try it. (to make greek yogurt I just strain my regular yogurt made with the recipe from chef Barbato).

I love your videos and the italian cuisine for being so simple and easy, yet so flavourful once you know how to make it and don't overdo some stuff as many people tend to do. And it's nice to see how many in common have cuisines in each country when it comes to those simple dishes. Gnocchi is very close to my heart as we have something similar in my country, we just serve it the different way usually, but I love getting inspired with italian cuisine since it's less heavy (i always loves pecorino but thanks to you I add it wherever I can now, I love it so much, it's just a shame it isn't cheaper here :P). Also love how you mention regions when you talk about those dishes. Would be cool to see a video where you comment different regions or towns and cities byt the dishes they specialize in, especially those less popular. Would love that, Italy is one of the 2 countries I want to visit next year and I love gastronomic adventures especially when it comes to little towns, they deserve so much more and are more autentic when it comes to food in my opinion!

I have been going to Amalfi since my early twenties (now 49). I first had this in Ristorante La piazetta in the dei Dogi square in Amalfi. Wonderful dish.

uh vincè this dish reminded me a recipe my mamma always makes, so good, i think she calls it "pasta al tegame". grazie, can't be more generic. it's basically big thick pasta like rigatoni, in a very quickly cooked tomato sauce made with good peeled canned tomatoes (pelati you know what i mean), only onion, generous amount of basil, black pepper and mozzarella. it goes surprisingly well with tabasco sauce (big fans in my family). then you can bake the leftovers and make pasta al forno, for dinner or the day after, it's so so good. ever heard of anything like that? my mom always used books from the 50 - 60s, i'll need to snatch a couple of those and check them out. i'm sure the recipe of my favourite tomato and onions chicken is there.

When I lived in Wisconsin, the local grocery store always had local, fresh gnocchi. I bought that stuff so much.
I'm glad that you were able to enjoy fresh gnocchi on a regular basis. It's not always easy to find fresh gnocchi, especially in smaller towns and cities. But if you're lucky enough to have a local grocery store that sells it, be sure to stock up!

Yummy creamy stringy with the cheese, then the pillowy texture of the gnocchi, and the freshness of the tomato, it is a combination that looks so good one has to try it. Simple dish with a complexity that would match any sophisticated dish. I got to make this but the burrata is hard to come by where I live. And unfortunately even a dry ricotta is hard to find you have to let what you can get drain of moisture over night. But I due believe it is a possibility to make. I enjoy the tang of the pecorino cheese over parmesan cheese, but in a pinch the parmesan works sometimes, I so use a little grated Asiago mixed with the parmesan. I believe this dish is adaptable to met what you can get you hands on at the time and your location. But it is the freshness of the lightly cooked tomatoes that bring it all together to keep it bright and lively.

Recipe looks great, although I have tried 2 versions of ricotta gnocchi (with whole egg, and with just the yolk) and I found that the "just yolk" version turned out a lot better. (lighter, fluffier)

One question: what is a good fat percentage for the ricotta cheese, in Finland there's the store brand ricotta with around 6% fat (made in Italy) and a Biraghi Gran Ricotta super cremosa (also made in Italy), which has the fat percentage 13%. What is the fat percentage of the everyday ricotta you use in your recipes and above all: does it make a difference?
I used the Biraghi ricotta for this recipe and needed a bit more flour for the gnocchi as a result of a more creamy and thus "wet" ricotta cheese.

Well this is definitely happening. Would it work with homemade cheat "ricotta" where you heat the milk and add vinegar then strain? Where I am there's not always ricotta at the conveniently close shops, but always have lots of milk.
Yes, you can use homemade ricotta made with vinegar and milk in gnocchi alla sorrentina. It will not be exactly the same as using store-bought ricotta, but it will still be delicious. The homemade ricotta may be a bit more tart than store-bought ricotta, so you may want to adjust the amount of salt
I used to make fresh ricotta gnocchi for my husband before we were married and had kids…. I sooooooo miss having that mich time. It was so delicious, but very laborious.

In eastern former republics of USSR we have a dish called "lazy vareniki (or pierogies)", 'lazy' because there's no staffing like normally for the pierogies. The recipe of your ricotta gnocchi remembers me the recipe of this dish: all-purpose flour, tvorog (cow cottage cheese but not so moist like cottage cheese), eggs, salt and sugar. Mixing, rolling small "sausages" and cutting diagonally into pieces, but bigger than your gnocchi. We keep them frozen, to cook boil them for 2-3 minutes and serve with melted butter. A fast breakfast dish 🙂 . I have 3 portions stacked in my fridge, will tag you on Instagram with photo later, so you can see.
So, I would like to make an experiment and instead of salt add some pecorino in my "lazy vareniki', I think it will be tasty ;-)

Regional dishes in the various areas of Italy never die ! The problem is only that abroad people know little about many of our regional specialties. People usually know more about the usual standard dishes. In fact, it often happens that there are tourists who, when they arrive in Italy, wherever they are, almost always order the same dishes that they have in their minds. Not knowing the various local products and specialties that are on the menu.

I've made this dish several times before. It saved my first frozen potato gnocchi that fell apart in boiling water (I didn't have a good technique for figuring out the amount of flour yet, so I tried to make gnocchi and cook a little bit of them... fresh where amazing but the frozen one just fell apart). By baking them Sorrento style (adding the sauce halfway through cooking because the gnocchi in that case were very fragile) the oven made those gnocchi more resistant and at that point they were delicious to eat.
I still have to make ricotta gnocchi... and since right now I know how to get raw milk I just have to make more cheese XD (both mozzarella and ricotta).
PS. Yesterday I made some greek yogurt and I used it with some pesto... it was amazing I think you should try it. (to make greek yogurt I just strain my regular yogurt made with the recipe from chef Barbato).

Flat surface for eggs... thats what ive heard. I believe it works better. I also separate each egg into a coffee cup incase a bad egg, shell, or broken yolk.
