@@vincenzosplate Vince’ I will tell you a story a real event , when I in Los Angeles I done the selections for the Masterchef for no professional chefs, but just for people do love cooking for hobbby, I made Gnocchi alla Sorrentina Neapolitan style, well at the last final selection, Gordon tried and loved my gnocchi, he said reminded the gnocchi he had when he was in Italy in his youth, and told me something that I will never forget: your recipe and this dish is delicious the best i tasted in this selections, but it’s boring, he said, it’s too classic , so I got high points at the end for the dish but 0 for creativity , to cut it short: I didn’t made to Masterchef lol and from that advise he gave me, made me feel like we are too for old in traditions cuisine recipes and we should be more open mind and experimenting new dishes. So I guess he is been creating a new style of gnocchi,( by the way I never heard Fried gnocchi) . I know that me and you that we are from Abruzzo Pescara it’s a big spit in the face for our old traditions and recipes, but Gordon Ramsay is a many Michelin stars Chef and there is a reason why. @@lucasdimedio Those TV shows always love "innovation" so it won't be boring, it's not real cooking for people. In the end, we all love the simple traditional food our grandmas made... That said, you can try to innovate in ways that don't totally ruin the point of the original dish. Making a gnocchi into a french fry however, is way over that line!
@@lucasdimedio Just like any other art, once you learn the "rules", you're allowed to deliberately break them. As long as there's some intention behind I it, and it's not completely random, it works. This, however, seems pretty random.

I am Italian and I live here in Germany and many people think, that Germans only eat sausages, potatoes and sauerkraut. :)

I was there for a few weeks studying as a pastry chef but the meats that came into the restaurant were on a whole diffrent galaxy compared to what we have in Ireland and I think the rest of the world that appreciate food would love to see a tour if you can. Thing is, he is... But his background is French cuisine. Here's an Italian guy who's judging what he sees on a TV, a guy who's dedicated probably most of his life to Italian cuisine, which is HIS cuisine so to speak, and then on the other hand there's Ramsey who can cook a lot of things to a level that most chefs in the world envy, has multiple and super successful restaurants, and a looooooot of Michelin stars, a LOT. And also has the time to be a celebrity star. So, yeah... He's a Michelin star chef, which doesn't mean perfection by the way, and the Italian guy from the video will never be CR7, but does he have at least ONE Michelin star?
In Poland we make „kopytka” which is very similiar to gnocchi and yes, we like to fry them and eat with fried onion and pork belly. But gnocchi... U dont fry gnocchi.
These videos are over 10 years old. He had a segment on TV around 2009 when these were televised. I think he was catering to the British palate using ingredients that are extremely cheap during the recession.

In France, we have "gnocchi à poeler"' which means "gnocchis to fry" they are either plain or filled with cheese and ready to be put in the frying pan. They are served crispy and usually without sauce. Maybe the same exists in GB.
@@vincenzosplatewe don’t have the same here… well, people do, but not because it’s a dish that we care about. Not many people eat gnocchi. It’s just that we don’t know what to do with it and don’t respect cultures enough 🤦♀️😂. We take what other people do and do it worse 😂.
Fried Gnocchi are delicious (but made the right way, not with ricotta and herbs), put them in a pan with some olive oil and fresh rosemary. My family, originating in calabria, serves them to roast meat for generations, but not with peas. Cooked Gnocchi are fantastic as well (in Pesto or in Gorgonzolasauce and roasted walnuts), but if you give me the choice, i go for the fried ones.
Lightly frying the gnocchi is common now so it doesn’t get soggy in the sauce (whether right or wrong). No idea where it came from but people have been putting oil into boiling water for a long time when cooking pasta ‘to stop it sticking together’ 🤷♀️

I think the most important part is that Gordon learned from the most well known chef in Italy. But they are known for beeing creative and never stoped learning new stuff. Same Gordon is doing. I don't like the use of pees aswell but that doesn't necessarily mean that his gnocchi won't taste beautiful
@@benjamingro4221 That's a very good point. I'm sure Gordon knows how to make those dishes the classic way. In this video he wasn't trying to make that though. He never said it was going to be anywhere near to being authentic. So I don't really see a problem...he only might word those this a bit clearer though.
I do like my gnocchi with a sear on it. I know it's 100% non-traditional, and if I was going to make a video about making it I'd definitely tell the viewers that it wasn't traditional. That said, there's a lot of things Gordon can't cook. Pegao Chilaquiles Grilled Cheese Ramen etc.

Frying the gnocchi a bit in extra virgin olive oil I actually like, its very tasty and adds a nice texture to something otherwise very soft, which can be nice in certain dishes. But I would never say this is authentic italian or claim its the classic way to make gnocchi! Got some fresh gnocchi a few days ago, boiled and had a nice 2-cheeses sauce to go with it. Used your tip for mixing the pecorino romano with the hot starchy pasta water first before putting it in the pan and it turned out absolutely delicious! I did add too much pasta water to the sauce though it made it a bit too wet, but now I know this for next time!

I love Vinnie…and his critiques are funny and accurate. However, my nonni used to do pan fried gnocchis sometimes…she’d just boil them too…but in the summer she did pan fried with vegetables and crispy prosciutto because it was “lighter” and more “summery”. I also had pan fried in Abruzzi once too. Hope Vinnie will try it because that’s my favorite way to have them. Either way, love the videos!

When u don't have that respect that comes from your heart as you cook..you are insulting those you cook for by serving them a horrible meal...especially when you cook other cuisines. I just spent 2 days making papardelle alla lepre from Giorgio Locatelli's recipe and I realise I wasted my time when I see Gordon telling us how Italian food really should be made: the little indents in the gnocchi are for the peas to sit inside. Next week, Gordon makes Bananas alla Carbonara.

It's big, heavy, winey, and stinks like a cowshed... but when you mantecare with some butter, grate some good parmigiano, pour a glass of Barolo... its like heaven. I have to confess my first batch of homemade papardelle was good, but the next batch I managed to balls up, so I did plan-B and used dried pasta - De Cecco penne rigate - and it was superb. I think this BIG sauce needs a heavy pasta, and penne always works.

Ramsey is making “Parisienne Gnocchi,” a classic French dish, inspired by Italian cuisine. They are delicious, but being Piemontese myself, I much prefer the Italian style with sage butter, or mushrooms.

In Poland we make „kopytka” which is very similiar to gnocchi and yes, we like to fry them and eat with fried onion and pork belly. But gnocchi... U dont fry gnocchi.

In France, we have "gnocchi à poeler"' which means "gnocchis to fry" they are either plain or filled with cheese and ready to be put in the frying pan. They are served crispy and usually without sauce. Maybe the same exists in GB.

Fried Gnocchi are delicious (but made the right way, not with ricotta and herbs), put them in a pan with some olive oil and fresh rosemary. My family, originating in calabria, serves them to roast meat for generations, but not with peas. Cooked Gnocchi are fantastic as well (in Pesto or in Gorgonzolasauce and roasted walnuts), but if you give me the choice, i go for the fried ones.

Lightly frying the gnocchi is common now so it doesn’t get soggy in the sauce (whether right or wrong). No idea where it came from but people have been putting oil into boiling water for a long time when cooking pasta ‘to stop it sticking together’ 🤷♀️

I think the most important part is that Gordon learned from the most well known chef in Italy. But they are known for beeing creative and never stoped learning new stuff.

I do like my gnocchi with a sear on it. I know it's 100% non-traditional, and if I was going to make a video about making it I'd definitely tell the viewers that it wasn't traditional.

Frying the gnocchi a bit in extra virgin olive oil I actually like, its very tasty and adds a nice texture to something otherwise very soft, which can be nice in certain dishes.
But I would never say this is authentic italian or claim its the classic way to make gnocchi!
Got some fresh gnocchi a few days ago, boiled and had a nice 2-cheeses sauce to go with it. Used your tip for mixing the pecorino romano with the hot starchy pasta water first before putting it in the pan and it turned out absolutely delicious! I did add too much pasta water to the sauce though it made it a bit too wet, but now I know this for next time!

I love Vinnie…and his critiques are funny and accurate.
However, my nonni used to do pan fried gnocchis sometimes…she’d just boil them too…but in the summer she did pan fried with vegetables and crispy prosciutto because it was “lighter” and more “summery”. I also had pan fried in Abruzzi once too.
Hope Vinnie will try it because that’s my favorite way to have them.

I just spent 2 days making papardelle alla lepre from Giorgio Locatelli's recipe and I realise I wasted my time when I see Gordon telling us how Italian food really should be made: the little indents in the gnocchi are for the peas to sit inside. Next week, Gordon makes Bananas alla Carbonara.

@@vincenzosplate The sauce was AMAZING! It's big, heavy, winey, and stinks like a cowshed... but when you mantecare with some butter, grate some good parmigiano, pour a glass of Barolo... its like heaven.
I have to confess my first batch of homemade papardelle was good, but the next batch I managed to balls up, so I did plan-B and used dried pasta - De Cecco penne rigate - and it was superb.
I think this BIG sauce needs a heavy pasta, and penne always works.

Ramsey is making “Parisienne Gnocchi,” a classic French dish, inspired by Italian cuisine.
They are delicious, but being Piemontese myself, I much prefer the Italian style with sage butter, or mushrooms.
