    Here in the midwest we soak the filets overnight in salt water. makes the filets white and really mild.

    Not sure why the orange color bothered you; line-caught salmon from Maine or eastern Canada is my favorite of ALL fish and it's very orange.

      Being a sushi fan, I’m not shy of color, the more the better! Loved pond-bottom and river sludge catfish from the Ohio River, can’t wait to try a saltwater cat. I bet people are just whiners.

    I got stabbed horribly once and decided to never handle a catfish again. I bought a long fish release to use after that. I did decide to get even, however, by cooking one for supper one evening. I filet it, sprinkled some Creole seasoning on and laid it on top of a couple of pads of butter in an iron skillet. Repeated the process for the other side. It tasted very good. I've also had sail cats and they're even better (sweet and flakey). One option is to use ultra-light gear and target them. The put up a good fight.

    They are tasty.
    If the blood line is too broad or dark soak it before cooking.

    Have used catfish and redfish to make a fish chowder that turned out great. Redfish was...OK.... catfish had the better flavor and texture for that set up. Not keen on the spines, but the meat cooks fine for some uses. Certainly no worse than the other bottom scrounging scavenger the redfish that in recent years rose up The quinine food chain...

    Soak salt cats in buttermilk or even regular milk overnight bread em up and they taste great!!

    Idahoan mashed potatoes in every flavor I’ve tried? The BOMB! Got hooked on them on the one outfitter supplied canoe trip I have ever taken, taken then on the 30+ trips since that One...and the price is right...!

    Whiting is excellent table fare. Love it fried in cornmeal. Catfish? Love gafftop but don't know about hardheads.

    I caught and cooked one a couple years ago in Navarre. I cut his head off and gutted him. Seasoned, floured, and fried. Pretty damn tasty

    I know this a really old video thread but.... here in Ontario and elsewhere we catch trout. Trout have that same orange meat color. They have a very different distinct taste, actually much like Salmon.

    If your hand still hurts maybe the tip of the barb is still in there. I've heard of a couple people who got stung by a barb and never knew there was one in there till it made its' way out much later. Does it still hurt to this day?

    Indiana boy here who journeys south once a year to dip his pole in the gulf, did not know locals thought I was crazy for eating catfish until fishing with a friend who lived in gulf shores. I have (now) learned greatly how to reduce my catfish catch by watching your videos, but also must admit that catfish tasted just fine in the meantime lol.

    I'll eat catfish all day long, but instant tators (Texan for Potatoes), cant do that.

    I eat small fresh water catfish all the time. Try skinning it, deheading it, then removing the guts. Take all the fins off except the tail. Use your knife to scrape the tail. Batter them and then fry them. Much more meat that way. The tail will fry up crispy like a potato chip. Two good pockets of meat toward where the backbone comes down and the shoulder area is.

    Im vacationing down in Ecuador, the only thing we catch is hardheads and some rare whiting every so often. I eat the catfish all the time I love them, not a lot of meat and a little bit of a hassle with the spines but with enough breadcrumbs and butter any fish can taste good.

    I was always warned about the salt cats being NO good to eat. I just took their word for it. We fish Clear water lakes in Northern Arkansas for Blue, Channel, and Flathead catfish. I always trim the red meat off the sides, and they taste awesome. We have lots of fish fries, and everyone just loves it. I will try eating the salt cats now, just to see for myself. Thanks for being brave and doing the taste test.

    Have you ever tried coating fish fillets in mustard, rolling them in instant mashed potato flakes, and deep frying? It's a little different from the ordinary but pretty good.

    Did this the other day. Filleted it out. Couldn’t tell the difference from regular freshwater catfish by taste test. I did notice their skin was thicker made it easier to fillet than freshwater catfish. I fried mine. Glad to see your take on the baked version!

    I grew up eating saltwater cats. The sail cats are better than the hardheads but both are pretty good especially fried.

    If the fillets are large enough, you can always trim off that lateral line, of darker meat. That should help remove any strong flavors. Or soak it in butter milk. But just remember, somebody once tried a grouper, with that same question! Any fish prepped and cooked right will taste good to someone!

    What!?!?!??? I feel I’ve been robbed. 4 years ago I was fishing a dock around Ono Island and was catching the crap out of those cats. And they were nice size. Then a guy told me they were poisonous and don’t eat them. DANG!! I didn’t think that sounded right. But, when in doubt, I threw them out, back out in the bay. Dolphins probably were thankful for a couple of them. I guess you did just fine. I still hear you on the Fishing Report Podcast from time to time.

    Being from Arkansas where freshwater catfish are plentiful, I never really understood why my guide kept throwing them back, while on a recent guided fishing trip in the gulf. I’ll definitely have to keep one or two to try next time I’m down there fishing. Great Video! Keep them coming!

    years ago i went to the gulf of Mexico in Texas and ate my first salt water cat fish.These are 10 times better than any fresh water catfish except maybe flat head cats.You folks down there along the salt water are spoiled with the variety that you have .

    Sailcat is really good. Hardhead, on the other hand, tastes to me like a blend of sailcat and cardboard.

    I've totally been spined in the palm of the hand before. Turned most of my forearm black. That was when I was 17, 20 years ago. I still have problems in that hand. I love turning cut up pieces of catfish fillets into little fried bites and making them into tacos. And instant taters are the jam!

      Yes, Sailcats are tasty. We catch them here about 4-5 lbs and they filet out really nice.

    balinese tradisional fishermen often catch a species of ocean catfish that is very similar to what we call a Mississippi catfish in North Carolina...it's not a targeted fish...mostly looking for Little Tuny...idk maybe has a different name in Alabama, but the meat is white, firm and very delicious.

    i just found your videos today, i also live in gulf shores i fish pretty often out in west beach and the canal, im gonna start surf fishing more cause i live walking distance to the beach. anyway one time i caught a baby catfish in my cast net and kept em fot bait, his top spine went deep in my finger, tell you what that hurt bad, also i hate catching them damn hard heads

    Hard Heads are ok if you want to take the risk of cleaning them. Just don't eat the Pin Fish.

    I tried one once, like you say, it’s edible ... but not preferable ... I did not like the excess slime you have to put up with when handling them ... also, have to cut as much of the bloodline out as possible

    I have had ocean catfish but blue catfish you really need to remove the dark meat to get rid of the real fishy taste.

    Years ago saltwater cats got a bad rap because they got into some sort of chemical toxin. But that has long been gone. Hardheads are good.

    I’m currently in fortmorgan Alabama, we have caught some white trout as well as some pompano, shark, rays, both types of catfish, and whiting, we have talked to some people and they said the hard heads are running. Any tips, thank you any ways.
