  • 8 Natural Casing Hot Dogs
    8 Buns
    2 large onions
    8 cheap beef hotdogs
    2 tablespoons butter
    1 cup water
    1 tablespoon cayenne pepper
    1 tablespoon paprika
    1 tablespoon salt
    1 tablespoon black pepper
    2 tablespoons yellow mustard
    6 ounces tomato paste
    1 teaspoon minced garlic
    1.5 lbs ground beef

    I used to work for a coney island joint in Flint. I helped the owner make the sauce. You also have to use chili powder and a bit of cumin. Paprika is correct but not a lot of cayenne. And it can't be authentic Flint without Koegel. It just can't.

    Many different recipes claiming to be Flint style. I've heard many claim there's no hamburger just ground up Koegels, that would be expensive. The basic recipe I use, as I remember it is; Brown about 5 lbs of hamburger with a diced up onion. Drain the grease off. Grind up any leftover grilled Koegels from the night before and put them in a pot with the browned hamburger, add 1/4 cup chili powder, add 1 1/2 teaspoons of cumin if the chili powder doesn't have it. Add 1 tablespoon of mustard and a quart of ripe tomatoes. Add the leftover sauce from the night before. Simmer on low for a few hours to remove most of the juice, but don't let it scorch or dry out. This is the base for most Flint style sauces. A little dash of liquid smoke makes up for no leftover grilled dogs. It takes a day for the cumin to reach its peak, but with the leftover sauce the flavor is there. So be cautious on adding it and some cumin is salty. These days cheap tomatoes don't have the ripe flavor so paste can be added. I had an aunt that worked in 3 different Coney places in Flint, they all had a little different recipes. A teaspoon of worchestire sauce in one and there might be garlic powder in another. Koegels even sells coney sauce, but I think it sucks. We all have or preferred coney place based on taste. You can tweak this recipe to suit your tastebuds. I can't have Koegels anymore because of MSG, but I use too until I developed a reaction to MSG.

      This is spot on... especially after you said, "a DASH of Liquid Smoke (little goes along way).. and Worcestershire is a must and a little Soy Sauce!!!
      But... I'm from New Mexico and I don't know what KOEGELS are...

      Per Dave Liskes's Flint Coney book all.ground beef, ground hot dog recipes are adaptions of the true original Macedonian recipe that uses beef heart and suet. Yes you do need finely ground beef 80-20 with the ground (skinless) hot dogs for proper consistency. Lots of creative variations so keep experimenting! Like the finely chopped onions, but I put the mustard on this then bury with sauce and onions...cheers!

    Thats not from Flint without Koegels Viennas it wont be right---born and raised in Flint for 38 years and i do have the recipe from Angelos Coney Island which in the 60s and 70s was by far the best coney place in town

    This is similar to many "authentic" Coney Sauce recipes out there, however most say to add the ground skinless hot dogs at the end to cook with everything else for the last 15 minutes. For the authentic history of the Flint Coney, read Dave Liske's book on it that also contains several recipes.

      Remember Saley's used to compete with Koegel as late as the 70's. Some coney island's used them. But Koegel's proved better.

    Coneys sause is not made with hotdogs in it , more of a taco meat, hamburger is used, and be used as a sloppy joe ,but if it works for u , great.

    If you're looking for an authentic Coney Sauce, Google - Port Huron Style Coney Sauce ( Port Huron, Michigan ) and follow that recipe exactly. I promise you, my friends, that you will be glad you did!
    Also, the onions you use for topping the hot dogs, chop them as fine as possible (I pulse them in a blender) for optimal flavor.

      If you can't get Koegel's where you're located, you can use Hebrew National or Nathan's all beef hot dogs with excellent results.
      While I do steam the buns, I don't steam or boil the hot dogs, I grill (fry) them in a cast iron skillet over low/med heat.

    I have the recipe in planted in my head it was kind of a myth that they put hot dogs in the chili everywhere I ever worked in the great Coney tour of Flint Michigan we didn't do that if there is a few hot dogs left over the next day they might grind them up and put them in but it was not part of the original recipe

      so he could sell them at his restaurant, there is no hearts or ground hotdogs, I can tell u that.down fall on making it is , u have to do a batch of 10 pounds or it won't turn out right he always said.rhats rhe con of it , pros are u can make other things out of it like sloppy Joe's and maybe nachos.

    While I appreciate the effort, you should call it a copycat recipe. It is nowhere close to being a Flint style Coney, well it is in terms of the consistency of the sauce, but that's about it. Flint style Coney sauce, aka Angelo's, has no ground beef, no ground hot dogs, no tomato sauce and definitely no mustard. You got the onion right but we chop the onion. Never process it. I guess when you just want a Coney fix, this will do but nothing wet goes into true Coney sauce. All spices. Kudos for the effort though.

      Also, the hotdogs are NEVER boiled! That's blasphemous! High heat on a flat top or in a pan. At home, just drizzle a bit of water. They steam and the high heat cooks them.

      It has ground beef, no beef hearts like others say, my dad paid for the recipe from angelos 40 yrs back, thats what he told me,he sold flint style coneys out of clio, MI, I watched him make it when I was a young boy, I grew up around his restaurant .my dad also used that for the sloppy Joe's he sold, he let the grease drip off the spatula before placing on a bun. I have a copy of it, someplace, down fall to making it is u have taken 10 pounds of it, he always said , or it won't taste right.

    Looks pretty good, I'm putting together a recipe for Coney Sauce, and this seems to be consistent with what I'm running across. I just don't like boiled dogs, I'd rather steam or grill my dog, but never water logged dogs.

      I know this is 4 years later, but if you're still looking for a good (and true) coney sauce; Google - Port Huron Style Coney Sauce (Port Huron, Michigan) and follow that recipe exactly. I promise you, my friend, you'll be glad you did!
      If you can't get Koegel's where you're at, you can use Hebrew National or Nathan's all beef hot dogs. Don't boil or steam the hot dogs - grill them in a heavy fry pan on low/med.low heat. Definitely steam the buns, though.

    Oops! I stopped watching....Flint coney dogs are made with Koegel Vienna hotdogs and their sauce is made with beef heart and other seasonings, not ground beef that you can buy at any market. Also, there are not any hotdogs ground into the sauce! In addition the onions that are put on top of the coney are diced like the video shows, but there's a minor addition to the onions....about an 1/8 to a 1/4 teaspoon of water. This is allowed to set in a covered container and refrigerated....it makes all the difference. A true Flint coney sauce has to be purchased and cooked. They are made by Abbott's meat who supplies Koegels. Sorry folks! You can't make a Flint coney without the right hotdog and sauce....All folks from Flint, MI know this...

    This is just a hot dog sauce someone had whipped up and not a Coney style sauce.
    I’m in Minnesota and not sure about the Koegels brand but I’m sure based off of everyone’s comment on them they must be GOOD. But the rest of your sauce isn’t even close to a “coney Sauce” your missing the chili powder and cummin and coney sauce doesn’t have cayenne in it.

    That's a paste!! not a sauce ! Turn the heat up when you're cooking the meat mix . Add some beef stock after your meat is browned and some damm chili powder too ! let that simmer for 20 minutes and it will render down to a nice sauce!! Not a dry paste . sorry dude . not hating! just educating!!

      Hot dogs were only added as a way to stretch the sauce when the Coney Island restaurant was running low. It wasn't a main ingredient. True coney sauce only had dry ingredients which were all spices and rough ground was the meat used. The dogs were NEVER boiled. They were always seared to a crispy crunch. Boiling water logs it and actually boils much of the flavor out. However, your version is a Flint styled coney as it was a dry sauce and not like Detroit's wet chili sauce. Good job though.

      Ah, yes, back in the day the hot dogs were gently boiled NOT grilled and crispy unless otherwise requested. I remember the big pot with the dogs bobbing around removed with using tongs. Only later were they steamed. The buns were always steamed too. I grew up 3 blocks away from Angelo's in the early 1960's and I ate my first Flint coney when I was 12 years old. It was a popular hang-out for us kids after school. A coney, fries and coke cost a quarter. They also served great hamburgers.
      My sister married 'Chris' (the only non-ethnic cook for over five years) in the '70's who made the sauce from an old Greek recipe which was mostly hot dogs and NOT just from the previous nights' left over dogs as you erroneously stated. The secret recipe was known very well by my family! There is no written down recipe that exists today, though. My bother-in-law is now a 'former' family member but we are still friends. He assured me recently that the recipe included suet, beef hearts, spices while beef was used mostly as a cheap filler rather than the prime ingredient. Beef was too heavy. Suet, beef hearts and hot dogs is why the sauce was so dry, light and fluffy back then and gave the Angelo's coney dogs that unique texture and flavor that wet chilly dogs couldn't match. It also made the restaurant famous to the Hollywood celebrities that stopped in after performing at the Flint Institute of Arts Theater. Many of their photos used to hang on the walls.
      The recipe didn't change until after the restaurant's ownership changed hands where beef became the main sauce ingredient added to suet and beef hearts. They stopped using hot dogs as the primary meat component but still used left overs ground up into the recipe to avoid waste. If you want to make authentic Flint/Greek style (with onions, spices) hot dog sauce you must use hot dogs as the prime ingredient, beef hearts, suet, and only 1/3 beef. Never use tomato sauce or ketchup. Anything else is NOT authentic! BTW, steam or boil the Koegle's natural casing hot dogs, never grill them. Then add the sweet onions and mustard as desired.
