Everyone writes about hygiene, but since this food is cooked, this is not a big problem. Much worse is that all of it is cooked in burnt oil, literally blackened from repeated frying, and therefore it’s scary to imagine what the concentration of carcinogens is in it, it’s pure poison. Plus it makes the food very greasy, but that's also less of a problem.
Amazing no one dies from food poisoning. 😂
Most food poisoning comes from like incorrectly storing food for then cooking and serving it, all food contains some degree of pathogens cause they are literally everywhere all around you. You only become ill when your immune system becomes overwhelmed and cannot fight them off, if you ingested like 5 bacteria that cause food poisoning you would likely be fine, if you ingested 100 you'd probably get sick(these numbers are way scaled down but it would be thousands to millions for real). Cooking reduces these down to levels your body can handle it doesn't eliminate them.
So these businesses that restock ingredients daily, they don't really have much chance to improperly store food in ways that would likely lead to a significant risk. There are exceptions as always shell fish are a good example as these can accumulate stuff from the environment depending on where they are harvested and be kinda bad even when fresh but broadly speaking if it's ingredients purchased that day cooked that day it shouldn't be much of an issue.
Spices and stuff like vinegar and salt can also work to limit pathogens.
