  • ✓ Watch Master Baker Gokhan (nickname Usta) as he uses his skills to make us a delicious freshly baked Turkish Pizza (a.k.a. Pide in Turkey), the Pide is cooked in a wood fired oven which adds it's own unique smokey flavour to the pizza.
    Gokhan is a Turkish Master Baker who learnt his skills in Turkey from when he was 11 years old we are lucky that he has bought his knowledge & craft over to us here in the UK to serve up authentic Pide (Turkish Pizza).

    (The pizza made in the wood fired oven reminds us of an Indian Tandoori Naan Bread oven because it imparts a delicious smoky flavour to the cooked pizza).
    On the day of my visit I had the Vegetarian Pide made with the following topping a seasoned mix of:
    * Spinach
    * Mushrooms
    * Courgette
    * Red & Green Capsicum Peppers
    * Cheese
    Also watch as Baker Gokhan effortlessly makes the pizza / pide dough and we were lucky enough to watch the whole dough making process from start to finish.
    The dough seen being made in this video is a 24 hours proved dough made using the following recipe ingredients:
    * Lukewarm Water
    * Salt
    * Olive Oil
    * Sugar
    * Yeast
    * Bread Flour
    For an additional crisp and crunchy texture the dough is rolled out in Cornflour
    The dough was quickly and skillfully stretched and then it was cooked in the Wood powered oven. The Pide cooked very quickly (within minutes) because the oven reaches an extremely high operating temperature.
    Many thanks to the baker/chef Gokhan, Chan and Dennis who welcomed us and graciously allowed us a privileged glimpse into their kitchen to watch the "Pide making" action.

    Pide is an older dish than pizza. Many Italian chefs told me that he was the ancestor of pizza. Portuguese chefs told me that the mother of Mediterranean cuisine is Turkey. Turkish cuisine is very rich, but people think that Turks only eat kebab. The only problem of Turkish food is that it is not globalized.

    Correct me if I'm wrong. This is pide, right? I thought the Turkish pizza was called lahmacun. Whatever it is, I love both dishes. In East Terrace, Adelaide, there is a place called Manooshi (owned by an Arabic lady) who makes something similar. I'm going to try this at home now!

      Yes u r right. Turkish pizza is lahmacun. It's like tarte flambe. And yes this is pide also which is turkish special fastfood. Both are dishes but my chose is lahmacun :D

      Rakesh Bhandary this is pide you are right and i can say lahmacun is differnt version of pide. Lahmacun is more thin then pide also ingredients of lahmacun is ground beef and vegies pides can be different

      When I was in Izmir in 1978-9, this was one of the first Turkish dishes I had. I remember it coming with an egg on it though. Miss this, and Donar kebab and the sour dough ekmek straight from the bakery.

      shannon bales heat it up to the highest temperature possible and then put in it.
      It’s possible with every oven.
      Electric and gas are just fine.
      They just lack that smoky flavor a little bit.

    mmm No this is not traditional.. I went out with a Turkish girl so I got this first hand.. I cook it in a pizza oven but this is not a pizza it's something else. Lahmacun is street food and like any street food it's all in one so you can handle and shove in your mouth.. I'm taking a job change and wanting to set up a place only doing street food.. I'm a Biochemist and fed up..So India, Turkey, Mexico and the list goes on.. Just a 3-4 dishes each day and affordable.. I want to do this properly so it's not going to be this year but I have the business plan and funds we shall see :-)
