great idea! i am surprised after steaming they come out looking with a perfect ball shape on top. does it have the texture of a cupcake? it looks more dense than a cupcake. also, are these better than cupcakes. enjoying your channel!
It seems the genius idea is instead of baking moisture out in a dry oven it cooks while maintaining the moist environment leaving it the most moist it can be!
Steaming uses moist heat to cook the cupcakes, so the result is moist and less crumbly. Baking uses dry heat to cook the cupcakes, and it requires more fat to rise and expand, so the result could be more fluffy and crumbly. I hope this helps. ☺️

If you have a bamboo steamer to fit all the cupcakes, that will be great. The lid of the bamboo steamer should absorb most of the moisture, so there wouldn’t be a lot of water droplets.
